I get my Kesong Puti from the Philippine Carabao Center. The problem is that being a government agency, they don't market their goods at all. You can basically only buy their products directly from them (which are only available in limited areas in the country). I want them to be available in stores nationwide. I want them to be as common as cheddar. It's our cultural heritage after all.

Did you perhaps think we imported cow's milk from abroad in the 1700s or something?

I think kesong should be branded and standardized like what european countries are doing with their cheeses. It should be marketed properly to gain more attention.
Nah. As a Filipino living in New York City for over 25 years, I've always wanted to have more of our food and culture readily available in as many places as possible. As much as we want recognition for who we are, there's some serious downsides to branding and standardization. An increase in industry leads to a growth in commercial farming, which leads to habitat loss (deforestation), more pollution, which leads to less wildlife. Bucolic parts of the world need to be left as is, simple living should be simple.

I think we have to globalize both KESONG PUTI AND QUEZO DE BOLA like European cheeses such as Halloumi, mozzarella and brie. They need to find a way to make kesong puti stay fresh for ONE MONTH or at least three months.

How do you actually make kesong puti? They don't sell this type of cheese where I'm from... Nada. Zipo. Zilch. I did, however, manage to find a company in the East Coast that does sell water buffalo milk, so I'm somewhat one step closer to getting my hands on this cheese... sorta...?? My two cents, I think kesong puti tastes better with banana leaves.

We have PH Carabao Center in Science City of Muñoz, Nueva Ecija. But even us from south of Nueva Ecija doesn't get to taste our very own products.
Their main purpose is to do farm work not dairy products like milk, cheese and butter.

Gumawa ako ng kesong puti gamit ang calamansi pero pag lagay ko palang ng kalamansi namoo na agad ang keso kung saan tumulo ang calamansi.
So ayon parang rubbery ang texture nya kesa sa dapat soft yung cheese.😔
