Some will argue that Iloilo is PH's first "City of Gastronomy," but my biases and taste buds will always point me back to Bacolod and Negros Occidental's cuisine as more topnotch and world-class. While neighboring islands have their food stuck to traditional recipes, Negrenses tend to elevate and make Filipino dishes pleasing for both locavores and for those with international palates. That's probably why many of the country's top chefs, restaurateurs, and food writers always trace their roots to Negros because Negrenses are not afraid to stir the pot in the culinary scene by going beyond the usual farm to table concept. I like the mindset of how these so called new food entreps from Bacolod and Negros are propagating the idea of bringing back to basic the food production and the food chain in general and how it can sustain the increasing population that we will not have to suffer lack of food and hunger in the future. Mr Uy for one has not only ventured into producing machineries and farm implements that are proudly Negros made but also into food production specifically organic ones that not only give premium to health and well being but also to our farmers as well.
This vlog was totally emotional and changing. The way they are working and recognizing the opportunity in the living organism, with this ecosystem and making it natural-like, is great. Such a thoughtful approach for sustainability-like creation of food chain where all pieces contribute towards a balance. Instead of artificial feeds or human intervention, they are letting nature take care of itself, which not only preserves the natural order but also promotes healthier and more organic outcomes. it's really good to know that we have these so much passionate entrepreneurs in the city that tries to elevate the livelihood of our workers, at the same time utilizing our resources and make a fresher, unique, and creative cuisine to serve the people. if not for this feature, we would be missing a bigger improvements and hardwork of these workers and entrepreneurs.. I hope that the whole country will be able to also give as much attention and compassion to our agricultural systems as much as these entrepreneurs does.
What I love most about your vlogs is that they’re not just focused on how the food tastes, but they’re also very informative. My mom and I really enjoy watching your videos, and we usually watch them while having our meals. We often find ourselves discussing how we can try cooking the dishes ourselves some time. And wanting to wander for Food , scenery, nature, tradition and people. Cannot compare to any country and yeah I'm a Philippine bias. haha. Nice featuring Negrense food. Also my minor hometown. I was born in Iloilo City in the early 70s, father side of the family. Lived in Bacolod for at least a year. Then on my mother side in San Jose Antique before moving to Manila for good in the late 70s.

I'm absolutely loving this episode, well produced, researched, and thought of. I was properly jealous of the amount of well cooked Filipino foods, some familiar and some not. Highlighting its source and as well as looking at its impact on the community and preserving an authentic Filipino food and taste. Way when I was young in negros kahit saan marami ka makakain and it all came from the natural resources,prutas,vegetables,fish nasa palayan lang ,kaya ang saya ng kabataan namin. Busog na busog kami noon kahit walang mga tinapay kasi merong tubo saka ang mga prutas kung saan saan lang mapipitas hays,sana maranasan din ng mga new generation ngayon ❤dati kasi yung mga lolo at lola ko they love farming talaga kaya walang gutom kasi pag pumunta ka palang sa bukid andun na lahat pag uwi mo marami kana bitbit😢i miss my childhood in Negros Occidental,Isabela

Nako, I really have to say this, you made me and my mom visit Lanai because the food in this vid was just sooo mouth-watering that I can't help but to show it to my mother the night after I watched this - and guess what? We were blown away! You definitely raised our expectations due to how they source their ingredients and they did not disappoint when we ate there! My dad’s family is from Bacolod and any summer vacations my family took in the Philippines were spent for the most part in Bacolod…I really had no idea that his hometown was so biodiverse. He was such a simple man during his life, but I kind of get why he was so proud of Bacolod.

I've become interest in culture, history, and traditional practices since I've moved to Australia. I was quite surprised that Indigenous people have their own Dinuguan recipe but they called it Dinuguam which they adapted from Filipino pearl divers.
I love this channel, and I hope Erwan gets the chance to visit the Romblon Islands as well, especially Tablas, Sibuyan, and Romblon Island. They have authentic delicacies to offer and a lifestyle that reflects the simplicity of the communities.
Bacolod is ❤. Being a Manila girl for all my life, going back to my grandparents (papa's hometown) in Negros every Christmas was definitely the best part of my life growing up. Their seafood game is so strong returning to Manila was indeed a struggle. And I definitely agree that Negrense dishes are pretty much straightforward but the taste these dishes offer are unique to the locality. Kinda bitin but hey there's more episode(s) coming in so yay! I enjoyed this very much. I was born in Bacolod City and grew up but later worked in Manila and Quezon City but my permanent resident now is in the US. I remember we always have fresh fish and vegetables for food. If I have yhe chance to get back to Bacolod, I will do it.

Negros really incorporates a lot of culture in their cuisine. Not to mention how fresh and healthy it is. Yummy too! That is why I love to keep coming back to our Negrense neighbor. I'm from Iloilo.
My city of birth. I’m coming home this December to eat all my childhood food like Balinghoy, mabuhay cafe, linupak, bagongon with coconut milk, kansi, pinarak, and a lot more. Haha. My ancestors are from Pontevedra, next to Hinigaran and San Enrique. We used to have a big fish pond in Embarcadero which at one point my dad used to have 44 hectares. We harvest lucon, crabs and bangrus.
Yes Embarcadero reminds me of "lucon" or huge prawns. Now I'm salivating. Going home too early next year to indulge in all the foods like the ones you mentioned. We have a client before whose family name is Vasquez but can't remember the first name now as it was more than 30 years ago

Oh my, this brought me back down memory lane. Papisik is a dying way of cooking native chicken or wild birds here in Samar. We call it PINAUPO, at least in the Northeastern side of Samar. The last time I ate this food was when I was in my elementary grades. I don't know if someone is still doing it here.

They have farm to table platform too. he produces used are from the surrounding. Dondee’s batchoy is another one. Raac’s chicken inasal near the welcome rotunda.Uma cafe is another recos. It’s near the boundary of Passi and Capiz. You have not tried Tytche yet in coastal road in jaro. You should try it. Enjoy Panay Island foods. 😊😊

My city of birth. I’m coming home this December to eat all my childhood food like Balinghoy, mabuhay cafe, linupak, bagongon with coconut milk, kansi, pinarak, and a lot more. Haha. My ancestors are from Pontevedra, next to Hinigaran and San Enrique. We used to have a big fish pond in Embarcadero which at one point my dad used to have 44 hectares. We harvest lucon, crabs and bangrus.
Yes Embarcadero reminds me of "lucon" or huge prawns. Now I'm salivating. Going home too early next year to indulge in all the foods like the ones you mentioned. We have a client before whose family name is Vasquez but can't remember the first name now as it was more than 30 years ago
@@tessiesison7765 actually I am a Campos. My family used used to own part of the Embarcadero. My mother is a. Vasquez . Both of my family are from Pontevedra. Yes, it’s nice to be back home again. I go every year if work permits. Food in Bacolod and Negros are to die for.

We used to own coffee lands as well that was run by the Uriarte in Gomez. What a time to be alive at this period. Yes, home is where good foods are waiting for you. Hehe. Yum.
I miss this type of piaya. Used to be sold outside of our school and in the downtown area for I think ₱5. Can’t wait to go home to BC and do a foodcrawl.

Gd day. On your next visit to Silay, you have to try "Dulce Gatas". Its made from Carabao's milk and really, really good.
Oh my, this brought me back down memory lane. Papisik is a dying way of cooking native chicken or wild birds here in Samar. We call it PINAUPO, at least in the Northeastern side of Samar. The last time I ate this food was when I was in my elementary grades. I don't know if someone is still doing it here.

Way backwhen I was young in negros kahit saan marami ka makakain and it all came from the natural resources,prutas,vegetables,fish nasa palayan lang ,kaya ang saya ng kabataan namin. Busog na busog kami noon kahit walang mga tinapay kasi merong tubo saka ang mga prutas kung saan saan lang mapipitas hays,sana maranasan din ng mga new generation ngayon ❤dati kasi yung mga lolo at lola ko they love farming talaga kaya walang gutom kasi pag pumunta ka palang sa bukid andun na lahat pag uwi mo marami kana bitbit😢i miss my childhood in Negros Occidental,Isabela I really miss the ensaladang puso ng saging na may gata at yung gumagawa nun si lola paro 100 years old sya nung Namatay 😢

yehey!!! panay island next!! please pass by Passi City if you are going to Roxas City from Iloilo City. Restaurants recommended is Midway. They have farm to table platform too. he produces used are from the surrounding. Dondee’s batchoy is another one. Raac’s chicken inasal near the welcome rotunda.Uma cafe is another recos. It’s near the boundary of Passi and Capiz. You have not tried Tytche yet in coastal road in jaro. You should try it. Enjoy Panay Island foods. 😊😊
