Easy Stuffed Pepper Soup - Chili Pepper Madness

  • This healthy yet hearty stuffed pepper soup recipe is truly a stuffed pepper in a bowl, with loads of peppers, ground meat, rice, and seasonings. Easy to make weeknight meal that is truly a stuffed pepper in a bowl!

    THINGS YOU’LL NEED:
    2 tablespoons olive oil
    1 medium onion chopped
    2 jalapeno peppers chopped
    1 medium bell pepper chopped
    1 habanero pepper chopped - optional! Omit if you want less heat, but hey! I actually included 3 of them. Yes!
    4 cloves garlic chopped
    1.5 pounds ground turkey or ground beef - I used ground turkey, but both are great
    1 tablespoon Cajun seasonings optional for more spice factor
    1 tablespoon paprika
    1 teaspoon dried basil
    1 teaspoon dried oregano
    ½ teaspoon cumin
    2 14-ounce cans of diced tomatoes
    1.5 cup chicken broth
    1 cup uncooked white rice (or more to stretch the meal)
    Salt and pepper to taste
    FOR TOPPING: Fresh chopped herbs, spicy chili flakes, crumbly white cheese, hot sauce, lime juice, any of your favorites!

    One of my weekly staples! This and of course, the taco soup. Love the Chicke tortilla soup, white chicken chili soup as well Mike! Cheers man!!

    I like that you invite variations and personal changes, gives everyone a lot more options to suit their tastes. I'll be making this soon and may do a low carb version with "riced" cauliflower.

      Thanks, Abbner. Yes, this is definitely a thicker soup, almost like a stew. But you can easily add in more broth. I do that all the time to spread it out for larger groups or for freezing. I appreciate it!

    I skipped the rice, added liquid smoke and cream cheese for a smokey creamy version. I also avoided green bell peppers since they are on the bitter side. Best soup I've ever had. Choose your broth wisely as that has a huge impact on the flavor of the soup.

      It's definitely thick, though you can easily thin it with stock to make more "soupy" to your preference and stretch it out. Cheers!!

      My husband tends to think that if anything is slightly thick it’s not soup. He thinks soup is only soup if it’s “watery” to dip bread in, but really thick soup is delicious on bread and you’re able to scoop up more than liquid. Great spicy take on this soup, chef!

    Does the rice need cooked before adding? Also, is it just minute rice?

      Christina, use uncooked rice. Add and simmer with the other ingredients. If you use minute rice, reduce your simmering time.

    Do chicken vs beef broth makes much of a difference on the flavor?

      Lovely, yes, you'll get more distinctive beef flavor with beef broth, though with the specific ingredients in this recipe, either would work. It would be more subtle with chicken broth, which I think is better here.

    Simple, and I bet it tastes that way, too. Looks like a recipe for stoned gardener with too much produce and time.
