Seeing all these comments of how it looks "raw" makes me wonder how many people here even know what a prime rib is.

why is it that prime rib has to equal rare? not many people know that
+dracolnyte Because t's not a steak, it's a huge piece of meat that is roasted, then a slice like he has is cut off. It's not rare it's just very tender and juicy meat on the inside, but it is cooked. If they cooked that type meat well-done it would taste like eating cardboard.
Chemically speaking, it's still medium rare since if it is cooked the 'classical' way i.e. 500 degrees for 5 minutes * weight of the meat then internal temperature of the meat still isn't enough for it be considered 'cooked' by any absolute definition of the word. I mean just look at how he is basically using the bloody moisture of the meat as some kind of morbid jus - if it was cooked, then that would have converted to something that actually looks like regular jus thanks to maillar reactions. This is raw-ish, regardless of what some pretentious douchebags would want you to believe.
I think this restaurant just holds some sentimental value because he ate there with his father. The prime rib from The Grill looked a lot better.

Actually I had the worst but quickly close to best experience at Smith and Wollensky's. During a 2001 "steak" tour of the east coast I ordered a new york steak at this restaurant and it arrived mournfully far too well done. When the waiter looked at me I gave him a sad, sad stare and he responded "Speak to me". They replaced the steak with another very rare on the inside and nicely charred on the outside. Plus their hash-browns it was a great meal.

I think he's kind of aware of this, and is owning it.
The reason why he’s so attached with S&W and their prime rib is because he’s been going there for a long time with his father. He admitted it in multiple videos. You can’t really take his advice seriously when it comes to S&W. He’ll love anything they throw at him.
that doesn’t make their food any less delicious. He’s not the only person who eats there it’s been open forever.

I was on the fence with his pretentiousness until I saw that Leica he put on the table while fine dining. Now I know he is a pretender that just kind of waddles through his stories to hopefully trick people into thinking he knows what he's talking about. Would rather see the chefs explain why they do what they do and not have some self-serving host take the spotlight.
Pitfalls of the internet: people from around the world with no conception of how perfect and just right this prime rib is get to commeny and dislike a perfectly good video.

it is a term to describe a taste of something moldy. I do not know about this prime rib, but steaks that are dry aged builds mold on skin and exterior parts. Even though those parts are cut out, the taste still resonances.
Either he really likes the word funky or he reviews a lot of funky things. I'm sure if you saw a few episodes of the meat show, you can figure out which one it is.

Years back when I went to Las Vegas I always went to Maxim hotel to get their Prime Rib special for $5. A green salad and the PR with baked potato. The steak was always thick and juicy and soft as butter.
The thing that makes prime rib so special is that it is impossible to make at home unless you spend a small fortune on the enormous piece of meat you have to purchase to make it right. You have to go out to a proper steakhouse to get it and it's always my favorite.
Meat don't kill you. It is protein and animal fat is good for you. Liu nieece liber earles. Natural stoff is harmful. That is like saying water is dethly.
And should be aged also
I mean, I can get an 8 pound, 28 day dry aged, LOCAL, grass fed grass finished prime rib roast for about 55-65 dollars here in Northern BC, Canada. WAY cheaper than any restaurant I can think of.

My favourite most consistent place for prime has to be... The Keg for their “Omega” 24oz prime rib. After going there for over 15 years I’ve never been let down. Unless they were sold out of course lol. Perfect cut, great crust, always cooked to order and they even cater to my preference of a lean cut.

I suppose the Opus 1 didn't hurt. But I agree, prime rib is just fantastic. Went many time to Lawry's in Chicago. Great food and theater. Live in Italy now and no such thing as prime rib here. Che piccato.
How do you think this compares to "House of Prime Rib" in San Francisco? I've never been that impressed with S & W, having eaten there probably about 8-10 times now, but I've never had the prime rib there. However, the prime rib at H of PR in San Francisco is just the best I have had. I wonder if you've had both for comparison.

Is there a way to eat the bone as well? It's sadness when you come to that last morsel of prime rib and there nothing left on your plate. You are soooo full but you want another bite. Mario Batali said people don't want to eat 25 bites of the same thing, but that can't be said of a well prepared slab of prime rib.

From the day I worked on Water St. downtown 1980 S&W was THE go to place,patio or center the Rib was amazing.

Let's sit down and review a meal that only .05% of UA-camrs could ever afford. A 1995 Opus One, I cannot imagine what S&W's outrageous markup is on that bottle. It sells for $375 - $425 at most internet retailers.

TR quality like a few other US chain places like Outback have ⬇️. Since 2012 or so. I do like Longhorn Steak House 🥩 . In Florida they are consistent.

Perfect medium rare. Any rarer and it could be 'chewy'. This is perfectly done.

Say what you want about this guy, but that is the cut of meat. And the way he eats it section by section is exactly how I like to also.
Used to be regular at a chain chop house. Liked to sit at the bar... before I got to my preferred seat a Mojito made the way I like it would be waiting for me... ( we are talking seconds here)... didn't go there for about 8 months... went back... Mojito was waiting for me... amazing service. Sadly it didn't survive Covid. A great Steak house where the staff know you is a thing to treasure. Make sure to get to know the chef as well and the bus people they often do the lions share of the work without the credit.
I'm just thinking about my gout and how I can only indulge in a steak once every couple months followed by an alopurinol😢😩

that wine was a perfect match !!! useto pair the prime rim at Mastro's in Scottsdale with it, perfection !!! or a 90's HOGUE is equally as satisfying..

prime rib is definitely the best of them all. my absolute favorite part of a prime rib is the sweet buttery and super savory ribbons of fat that run around the eye, they melt in your mouth and hold the majority of the flavor.

This steak just had sentimental value for it. He was over hyping the whole thing. I went to this restaurant during my 4 day stay in NY, and I can say 100% that it wasn't worth. Sure it was good, but as good as he had said it? Definetly not

People, for your own education, prime ribs are usually served rare because the meat is so tender it doesn't need much cooking. The rib is roasted on the outside to develop a flavoured crust. I still would not eat it because it looks disgusting.
that doesnt make sense, people usually under cook meat to keep it tender. If you were to reverse your logic, then meat that is very tough needs a lot of cooking?
I think you are confusing it with braising, where the longer you cook it, the more tender it gets as the meat is broken down

hahha all theses guys in the comments think pink is raw... this is cooked perfect! do a test, order a steak overcooked and one medium rare to rare, take a blind test and report which ones tastes better. to back this up ask for prime rib medium or well done, any chef worth their weight wont do it. the cap is my favourite too by far.

Visited USA about ten years ago, la offered little in wow meats, then Dallas where I had the best steak I'd ever tasted, short trip to Mexico which offered great alternative meats such as goat, then to New York, did the open top bus tourist thing and was recommended this restaurant from the bus speaker, booked table that night and wasn't disappointed absolutely stunning meal and experience in every way and my new best ever steak was discovered, then on to lowly Cleveland where I stumbled upon a local steak house and to my amazement at a 3rd of the price local grass fed rare breed steak took it up another notch, absolutely taken aback as after Dallas and Manhattan wasn't expecting the absolute stunning piece of meat I had the pleasure of devouring , best steak to this day was Cleveland, finished in Atlanta where to b honest I was beefed out so settled for pulled pork n ribs BBQ, best food trip I've experienced and very fond memories of this restaurant!
