2 eggs (110g)
94g sugar
1 g of salt
Starch syrup 8g
12g fresh cream
40g dark couverture chocolate
100 g unsalted butter
72 g flour (for cake)
16g cocoa powder
2 g baking powder
syrup
20 g of water
10 g sugar
3 g rum
30g fresh cream
60g dark couverture chocolate

I've tried many pound cake recipes and this one was good-no failure this time and texture was very nice. However, I need your help, all the poundcakes I've made (including this one) were flat. I know the size of the pan is a bit different but I'm not sure if it's also because I'm over mixing, under mixing, or the combo of egg and butter didn't go well :/ Thank you for your help!
If the heat at the bottom of the oven is low, it will swell less.
Even if you mix it a little, it doesn't swell too much, but it swells a little.
Or maybe the baking powder has weakened over time.
If you use fresh baking powder, it will rise well.

초콜릿 종류에 따라 단맛이 많이 달라집니다
저는 쌉쌀한 다크(60%정도) 사용했습니다
좀 달달한 초콜릿을 쓰시면 파운드 케이크가 제거 만든것 보다는 좀 더 달 수는 있습니다^^
자른단면에 구멍이있는건 왜그런걸까요?
