Living here in South Florida, the Thanksgiving Day weather is NOT blustery with fall leaves swirling in the cold breeze outside. It is more humid and hot with the air conditioner humming...SO THIS SALAD IS ABSOLUTELY PERFECT and a welcome addition to the Thanksgiving feast. As usual Beth, you hit the mark with this salad..which will be featured on our Thanksgiving table. Again THANK YOU!!!
My food processor disk has a slice side that delivers the same pretty result as the other two methods! I soak my walnuts about 30 minutes to enliven their enzymes, making them more digestible. Pat dry and leave on paper towels several hours. They are still crunchy and much healthier. While prepping those, can plump the dried cranberries the same way.

I made your harvest salad with brussels sprouts, butternut squash, and grapes and brought them to Friendsgiving a couple years ago, and they were the first thing to go, believe it or not! I might try out this recipe for Friendsgiving this year, thanks Beth!

Looks delicious. I watched Nigella Lawson remove seeds from pomegranates by hitting the back of the halved pomegranate with a wooden spoon. Seemed to work well.

If you don't like the taste of brussel sprouts I've made something very similar but instead I used a bag of broccoli slaw/chopped broccoli and it came out great! (Especially since I added bacon bits to mine 😄)

This is very yummy 🤤 salad for any time really but one thing caught my attention is a lot of work and process you put into seeding the pomegranate. It’s not that complicated really. It’s easier to cut the top (small crown) in a circle shape. then make a cut on the side of the pomegranate starting from the top to the bottom (usually 4 slides). Then you can easily pull each slide out and then start seeding. Once you are all done seeding, tear the white membrane and rub your stained hands with them, and it will remove all the juice stains from your fingers and hands. Just like you are wiping your hands with a damp cloth. Try it and let me know what you think about it.
