    Just a hack for easy separation of egg yolks from whites, use an empty bottle(water, soft drink, whatever you have on hand...), crack egg in a bowl, gently squeeze bottle to remove some air, softly place bottle on egg yolk, and release gently while pulling upward. Separates perfectly💕

    Spilling something when you’re baking is essential to the flavor lol. It doesn’t taste as good if everything makes it into the bowl flawlessly.

      Tell my chef instructors from school that 😂 they always used to get on me about spilling ingredients, I always said "if you leave clean it means you didn't do enough" 😂😂😂

      For me, it is always essential to misread a measurement. My most recent blunder being that I misread teaspoons as tablespoons. You could really taste the vanilla in my muffins! 😄

    Awesome. Crime bruleé is the perfect dessert, because it’s never too heavy. It’s also great to share at a restaurant if your don’t want something heavy like cheesecake etc.

    Very relaxing, good camera work, and looks delicious.
    I agree that the top is pretty finicky (nice job, btw), but it tastes too good for me to skip. So I cheat the topping, by making the caramel separately. If you're feeling fancy, you can pour it into a thin layer on parchment or a silpat to cool, then grind it up, sprinkle it on the custard, and broil just long enough to melt it again. The *real* lazy way is to just pour directly onto the custard.
    Perfectly even browning, no torch (or skill) required.

    Oh and an easier way to put the sugar on top is get half a flat spoonful and shake it off the front while moving away from the direction it's falling. Keeps the force evenly distributed so you don't end up with a big pile on one side. And always shak your creme brulee slightly before removing from the oven, if It jiggles visibly at all it's not done

    I prefer to strain the cream+egg mixture (before pouring it into the ramekins). That would ensure no bits of egg passes through, resulting in a truly silky final product.
    Really high-quality video btw.
