Lookin great Todd. On the clutch pedal. Increasing travel will help, but you may find as I did, that effort becomes so light it is hard to read through your shoe sole. An additional return spring , external to the clutch, brings up resistance enough to help you feel where you are in the engagement range. I used a screen door spring that provides linear resistance though out the range. As a bonus, it also provides a more positive return too engagement to be sure you are not accidentally slipping it.
About the clutch. My car is the same. There is a technique to using such a light short-throw clutch pedal. Make sure that your heel stays on the floor so that you just use your ankle to depress the clutch, not your leg. It helps if the pedal is bottom hinged.
