Plus, unlike most popular manga that publishes weekly, AoT is a monthly series. Meaning only 12 chapters per year (that's about 6-7 anime episodes). S2 was actually announced for 2016 (2 years after S1), but WIT studio was busy making other shows (Kabaneri of the Iron Fortress & the Ancient Magus' Bride), so they pushed it to 2017. That's why S2 took that long to be made. And nope, manga and anime are always airing/publishing in tandem (the AoT manga just ended last year). Anime is basically a fancy commercial for the manga. Why? To boost the manga sales. If a manga has already ended, it's very unlikely that it's gonna get multiple seasons of anime (unless you're Demon Slayer). For examples: The Promised Neverland, Tokyo Ghoul, and so on.
Also, AOT took long lengths between seasons because the manga writer was directly involved with the anime's creation. The reason why he wanted such a long gap was because he wanted everything to be perfect. Additionally, he didn't want the anime to catch up to the manga too quickly, because a lot of anime have the problem of deciding what to do once they run out of source material to rely on. For example, the original Fullmetal Alchemist anime had a different ending from the manga because it caught up quickly. So basically, the gap gave the writer some room for revision and decisions, and made sure the anime could stay faithful with some solid footing.
To make it short: manga are stories drawn in weekly/monthly magazines. If they works good (magazines readers votes for the bests), more/many chapters are published. If they works enough, chapters are united in books, in volumes. If they works enough, they are adapted in anime. In a few rare cases, it's an original anime that comes out, not adapted from a book. In others few rare cases, anime and the books (the manga) comes out ~at the same time (like it was for "Neon Genesis Evangelion").
While producing season 1 of AOT, they weren't expecting doing more. In fact they took some liberties in season 1, changing small details and cutting stuff that they thought wouldn't be important, which would eventually be relevant in later seasons.
So the Manga was still going when season 1 came out. But AoT wasnt a big hit early on and wasnt picked up for a very long time, so people had to wait which turned a lot of viewers into manga reader that helped bolster its notoriety. The manga ran from 2009 to just finishing last spring in 2021, and the final part of the anime comes out Jan 2023. Animes usually come out 2-3 years after the manga is released. That being said the delay also had some unseen benefits as it allowed Isayama to rewrite or refine certain scenes and characters whose manga representation he was unsatisfied with.
With manga it happens the same as with books, they're usually not over when the shows start. It seems like you guys didn't know this but is way way less common to start shows/movies/animes when their books/mangas are over, the most common thing is them being posted at the same time but with the original source being ahead obviously

Well, I'm not sure why it took 4 years and I started watching when season 2 was airing so thankfully I didn't have to suffer through those 4 years. I would assume why it took so long is that they didn't have enough manga content to continue at the time. And actually the manga just ended not that long ago, so the manga was NOT completed when AOT was airing. Typically manga titles get picked up for an anime adaption even if the manga is NOT completed even when there's not enough content to fully adapt to it's completion. And they only continue for more seasons/episodes if the series has high viewer ratings and is popular enough.
They took so long with season 2 bc they didn't have enough content from manga to do it, you have to think manga ended like a year and a half ago and the last episodes of the show are coming at the start of next year. Season 3 took them 2 years and for season 4 the animation studio was forced to do season 4 part 1 in just 8 months bc ig they didn't want to make the public wait longer since it's a popular show and it gives them money. This is an extremely hard show to animate, 8 months weren't enough (they had years for all the other seasons) which is why the anime went through many changes in the animation (as using more cgi, for example) and the workers were literally exploited to do it, some have even said there was times in which they couldn't even come back home from work for three days! It's crazy.
