Hey Sam, he fingerpicks it on the studio version. Right at the intro and throughout there are two guitars. One is picking, the other strumming. Put some good headphones on and you'll be able to hear it.
I think it's just a playful twist on "wearing your heart on your sleeve". Seven being a lucky gambling number. Dont think it has some exact meaning, but he's playing with the famous idiom and making Loretta more risky and cool, and less emo.
