    Ingredients:
    1 kg pork belly (adobo cut)
    700 ml water
    1 cup soy sauce
    1/3 cup vinegar
    5 small pcs bay leaves
    1 tsp. black pepper
    1 tbsp. oil
    1 medium onion (chopped)
    5 gloves garlic (minced)
    450 g tomatoes (sliced)
    1 tbsp. chili flakes (optional)
    3 pcs of cheery tomatoes (sliced into 2, garnished)
    Cooking Procedure:
    1. Heat the pan on medium heat, pour in the pork belly, water, soy sauce, vinegar, bay leaves and black pepper.
    2. Boil the pork belly for 45 - 1 hour or until the pork is tender. Remove and separate the meat from the sauce.
    Note: Please remove the impurities while boiling the pork.
    3. Heat the pan on medium heat and pour in the oil, saute onion until translucent and garlic until aromatic.
    4. Add tomatoes, mix thoroughly and stir until it becomes soft. Add the adobo pork (without its sauce) and mix. Cook for 1 min.
    5. Add enough adobo sauce and chili flakes and simmer for 1-2 minutes then turn off the stove.
    6. Transfer to a serving plate, serve hot with rice and enjoy.
    Note: you can add sugar if you want the adobo sa kamatis to be slightly sweet.
