I've been taught to muddle the mint leaves and thick lime wedges together. But your technique is interesting because you make cleaning up after customers or guests much easier. now I'm pondering when it comes to a Mojito, do people like a nice clean style like this or do people prefer when a barman gets creative and beautify the drink with the mint, ice, lime and the crushed ice?
That is a good question. I think it depends on the customers personal preference. I did not have any crushed ice and I was trying to limit the number of ingredients. But it still tastes great.

I do prefer my el presidente without the grenadine and i use 1 oz of smith&cross jamaican rum and 1 oz of havanna 3 year old white rum.
