How would one convert this piece to a 6 string? Would it just be as simple as an open G tuning and hit the two high strings along with the rest?

The riff almost sounds like prospect Lane also just in a different pitch or tune

Yeah, you nailed it. Steve played Prospect Lane on a conventional guitar. He must have recycled the riff and put it on cigar box for this song.
