This is the recipe I was able to come up with from the video, I'll update it after I try to make it Ingredients: - 3 whole garlics - 3 yellow onions - 1 cup of herbs(equal parts thyme, oregano, and rosemary) - 2 sticks of unsalted butter - 1 rib roast - Beef stock - red onion(your preference) - 5-6 celery sticks -red wine - worcestershire sauce - mayonnaise - prepared horseradish 1. Start by adding 1 cup of herbs(thyme, oregano, rosemary), 2 sticks of butter, and 10-12 cloves of garlic into the food processor and blend until butter is nice and soft. 2. Use an oven roast pan; chop 2 yellow onions, celery sticks(maybe carrots too) and place them inside the oven roast pan. Place a rack over them and rest the rib roast on top. Pat the meat dry to help the compound butter stick and rub the butter all over the rib roast. 3. Pour in beef stock until it starts to touch the bottom of the meat, at this point you can throw in any extra herbs you have and want to add in. Next, chop off 2 heads of garlic and add them in, they'll be used for the mayonnaise horseradish later. 4. Season the rib roast with salt and pepper and put it in the oven at 500 degrees and cook at 5 minutes per pound and then turn off and leave in the oven for 2 hours so it slowly cools down. DO NOT OPEN LID IN THOSE TWO HOURS. 5. Cut up red and yellow onions, just diced. 6. Heat up alot of oil in a pan and add either a half or full stick of butter. 7. Cook them for 30 minutes, go ahead and season them with some salt & pepper. When the onions start to brown up and caramelize, depending on the amount, throw in 5-10 dabs of worcestershire sauce. Mix sauce in and after worcestershire has been cooked down for 10 minutes add some red wine, 1 - 1 ½ cups. Then just cook the onions down to whatever you want. 8. Take the rib roast out of the oven and let it sit, it’ll cook for 30 minutes to 1 hour inside while cooling down. 9. Now to make the horseradish mayonnaise garlic sauce, take the garlic bulbs out of the roast pan and squeeze them into a bowl. Take whatever is left over from the bulbs and add it back into the roast pan. Add 3-4 tablespoons of mayonnaise, 1-2 tablespoons of horseradish, drizzle in some worcestershire sauce, sprinkle in some salt and pepper, mix it all together and the sauce is done. 10. Remove the rib roast from the pan and put the oven roast pan with the veggies and beef stock on the stove and bring to a simmer. Add in 3 or so cups of beef stock and smash the veggies a little to get more juices out. After cooking a bit, use a strainer to remove all the chunky pieces and you'll be left with au jus. 11. At this point assemble your sandwich how you desire, you can add 2-3 slices of swiss cheese on top and put in oven until cheese is bubbling. Add the top slices of bread in as well to toast them.

I did the 500 degree option today. It was cooked perfect 😋
I did a less than 3 lb roast and kept it in for 15 mins then left it in for 2 hours and it was only at 115 degrees internal temp...ruined our dinner
