Some laps of Winton from the Hyundai i30 Sedan N launch earlier this year. As far as (relatively) cheap track cars go, it doesn't get much better.

For that long, fast, double-left, are you 'neutral' on the pedals (neither braking nor accelerating)?

Yep pretty much. Go in as deep as you dare with maybe a light brake then let tyre scrub wash off the required speed, though usually a little bit of throttle is required to keep the speed up. I think at least.
