    We miss Grandma Browns here in Rochester, NY!
    I’ve been using the same recipe but instead of boiling the dry navy beans, I use 3 16 oz cans of Bush’s or Goya navy beans (rinsed well) and 3 oz. of maple flavored ham (diced). Absolutely delicious. Taste just like Grandma Brown’s!

      Hi Judy! Thanks for your input! I plan on making another video where I test this recipe with Instant Pot, Slow Cooker, and also by using canned beans. I have included a quick soak method in the original recipe description too. Thanks for visiting, and Happy Fourth of July!

    Have my pressure canner going right now with 8 pints of them.... This is about the 8th time I've made them and hubby loves them....

    • @BanDanaGramma
      @BanDanaGramma  Рік тому +1

      Hi Cheryl! Thanks so much for your feedback. We love them too! However, I'm a little concerned about canning beans made with this recipe because they are so thick. The viscosity may be too dense for the correct heat/pressure to reach the center of the jars, similar as to why we are advised not to can pumpkin puree. Commercial canning equipment can handle it, but not home canning equipment. I may try canning them if I make them looser and compare them to other recipes approved for canning. I just felt I wouldn't be responsible if I didn't mention that. I'm so glad you and your family are enjoying these delicous beans! Blessings from BanDana Gramma.

      You're welcome! These are a different kind of bean, not tomato based and not as heavily flavored, but the good bean flavor comes through with a little sweetness and a touch of bacon. It is a very popular bean for bean sandwiches and is always brought to picnics and family gatherings around upState New York! The factory shut down during Covid, and they have been very slow to get going again, still hard to find, and a bit pricey now.

      The current lady who owns it is the problem. She had a reputation for underpaying and being a B*TCH, and was rude to a reporter who called that wanted to do a story on her needing to hire help to restart production. And a family who has had a grocery store here in Syracuse for a few generations tried to make an offer to either buy everything off her or partner up and run it while she got a cut but she wouldn't even entertain an offer. :(

      It isn't like it would be a start-up. Wegmans, Price Chopper, Walmart, Hannaford, Stop N Shops, Tops, Shure Fine, Weis, Big M, and other chains and mom n pops groceries across the northeast (Even Publix in Florida was selling it!) would put in orders immediately. But one crabby, possibly crazy, lady has put a block on it.

    Any update on adoptions for the slow cooker? I substituted my slow cooker for the 5-6 hours in the oven and it worked well. Be sure to use a large enough cooker so that the stirring isn't messy. I didn't need to add water, but you should check them regularly as some cookers have more surface area and some have better sealing covers.

    • @BanDanaGramma
      @BanDanaGramma  Рік тому +1

      Hi Laura. No, not at all. It is not tomato based, nor is it soupy with brown sugar like other popular brands. It is thicker, and you taste more of the good bean flavor, lightly enhanced with a touch of brown sugar and bacon. It has always been very popular straight from the can (or per recipe) for making bean sandwiches! For picnics or other family gatherings, we take this original recipe, add a bit more brown sugar, put it in a casserole dish, and lay strips of bacon on top before baking a second time, crisping up the bacon and letting the grease further flavor the beans. Some people also add mustard and/or catsup and more diced onions before baking, but I prefer it without.

    • @BanDanaGramma
      @BanDanaGramma  Рік тому

      Hi Jim, thank you for watching and thank you for your question. No, I would not can this recipe because it is too thick. The viscosity might prevent the pressure and heat from reaching the center of the jar similar to when they say not to can pumpkin pulp. Our home canning equipment cannot do the same thing that commercial canning equipment can do. So enjoy them as you make them and keep them in the fridge and then make some more. Thanks again for watching. With love from bandana gramma

    When the Navy beans are soft and tender and soon to be placed in the oven, add 1/8 cup finely diced sweet onion, a tablespoon of molasses syrup, 1/8 cup ketchup, and 2 teaspoons of yellow mustard. Placed lightly fried bacon as in barely browned (not crispy) 12 to 16 soft bacon strips cut in half and stirred in during the last 30 minutes of baking and covered as do not want hard, crunchy, well-done bacon. The alternative to bacon is 1 cup of small diced pieces of ham. 1/2 cup Light Brown Sugar is always a must. Do not use Basil Bay leaf as it will make you puke and no bacon grease. The Crock Pot method does not work.

    Could you do these in a slow cooker?

    • @BanDanaGramma
      @BanDanaGramma  Рік тому

      I plan to try that soon. I would soak them overnight or do the quick soak method. Quick soak: Rinse and sort the beans (take out bad ones, stones, etc). Put beans in pot and cover with 2-3 inches of water. Bring to boil (some say just until a few bubbles form), cover and take off heat, then let sit for 1 hour. This does not cook your beans, but softens them so they cook more evenly and quicker when you begin your recipe. Some say to avoid salt until your beans have thoroughly cooked because salt might lengthen cooking time. I've done it with and without, not sure if there is a difference.

    • @BanDanaGramma
      @BanDanaGramma  Рік тому +2

      Yay! I'm so glad you enjoyed them. I would not try canning them, like you said, they are too dense. I know that is confusing to some, because after all, Grandma Browns beans are canned, but home canning equiptment isn't capable of doing what commericial canners can do. It's better to keep them in fridge and enjoy them, then make some more. It might be interesting to freeze them and see how they hold up after thawing. I have not tried that yet. I am going to try to pressure cook the recipe and see how they turn out (life is getting in the way, so I didn't do it today as planned). If they taste as good, it would be quicker. Thanks for leaving your feedback Nancy! Blessings on you and yours with love from BanDana Gramma. AND PLEASE SHARE THE VIDEO WITH YOUR FRIENDS WHO LIKE GRANDMA BROWNS!

      Most definitely can be canned. I can Great northerns all the time. Soak overnight, drain and rinse. Cook your bacon. Add one cup beans per pint little bit of bacon and little onions, top off to 1 in with water or broth and pressure can for 75 minutes. 90 minutes for quarts. If you add bay leaf, use very sparingly as it tends to strengthen during the processing.

      Yes, do what you always do. This recipe is like the beans straight from the can except I added onions, which is not in the original recipe (that's why I said "optional"). Just treat these like you would the ones right out of the can. You can make them without the onions first (I added them but the canned version does not have them), then doctor them up and reheat like you would if you had the original canned beans. Or make them with the onions and add the other ingredients afterwards like you usually do. Thanks for watching and for your comment! Enjoy!

      Dee Dee. that is how my mom always did it too. She took the beans straight from the can, added brown sugar, mollases, minced onion, and then did a patchwork with bacon and hot dogs on top and popped it in the oven (just bacon if serving with dogs at a bbq). I was so sad when I heard Grandma Browns was no longer as my fiance is a total foodie (but from Georgia) and I been wanting to make these for them. All you see are rumors on internet. Like, family members don't want to carry on the legacy. It's a lot of work, plus labor is costly if you want to attract good workers. Just hearsay. The prices keep going up, and there's comes a point where consumers will pass on price and make their own. The recipe I shared is really good, but it does take some time to make. I'm continuing to research "dupe" recipes that taste great and are easier, quicker, and cheaper to make (no overnight soaking). I understand there are those willing to pay premium prices for the convenience of just opening the can, and that's okay too, if you can find the beans! While we all wish the original Grandma Browns would come back, my guess is they will sell to a big corporation who will market the beans with the same label. Maybe they'll be the same, but probably they won't. Time will tell.
