Looks absolutely delicious! As for your sauce, put about a quarter to a half of water into the jar and put the cover back on and shake to get out the rest of the sauce. To thicken up your sauce a bit more, use less water and add some tomato paste. Other than that it looked super yummy!
I'm Italian and yes traditionally there's no ground beef but yes you can make lasagna anyway you want! You can also do eggplant lasagna so people need to just shut it lol looks great!

I always add tomato paste to my sauce and we use crushed tomatoes instead of diced. Crushed are more flavourful than diced. Not criticizing........just passing on what my Italian Grandpa and Grama taught me. You do a great job Alicia and I am so glad Zoey will be happy with her favorite meal! Definitely too much water. The amount of sauce that is left behind in those containers is not gonna make that much of a difference.
Don’t add so much water.Just a few tablespoons of water in jars is all you need.
So much water takes flavor away.

I add more seasoning to my ricotta mixture: basil, Italian seasoning, garlic, parm, salt and pepper. Delicious!

Idk which has more water. The Pacific Ocean or your sauce.
Why all the water?
The longer you simmer, the more water will evaporate out of the sauce. It's a preference.
