I keep a continuous pot of bone broth cooking on low on the back burner. As I need broth I take from the pot and add in more water. Cook everything until the bones can be crushed in your hands. Any veggie scraps get added in as well. All the onion and carrot peels get saved an put in the freezer for another batch as needed.

Carrots always take the longest to cook, so my mom told me to get the carrots onto cooking first thing. She also told me that celery has a strong flavor when cooking soup or stew so only use a small amount or it will take over the dish.

Next time when there's sticking in the pot, add a little bit of chicken stock so that it's not dry. You should have been babysitting your onions because they don't look caramelised, they look like they were one minute away from burning and drying out. You do your prep before you put things into a pot on the stove. This includes, cutting your vegetables and shredding/cutting your chicken. Also, for potatoes, you add those after the rest of your vegetables have had time to cook. Add your cooked shredded chicken, add the potatoes, then add your water/chicken broth. Put a lid halfway over the pot so that it allows the steam out and prevents boiling over and cook for twenty five to thirty five minutes depending upon the size of your potatoes.
In my experience, adding the potatoes with everything else dries out and can either leave a hard crust on the potatoes or burn them completely. Since you already have cooked chicken, you add that at the same time as your potatoes to allow the chicken to heat up and add more flavour to the soup.

I always add the better than bullion to my canned or cartons of stock or broth to add more flavor to them also. It gives is so much more of a homemade stock flavor. It’s good to see I’m not the only cook using this hack. It really does impart so much more flavor to the dish. Look how rich the color of your stock is. Looks yummy! I do this with the beef and vegetable stocks as well, using their roast beef and vegetable better than bullion flavors also. I use a splash of Maggie, Kitchen Bouquet, or a similar add in also whenever making a stew, soup or many other sauces with a beef or other dark colored broth. Some previously brewed coffee also makes a great addition to these types of sauces or as a meat tenderizer as well. That is a tip I picked up from my father in law who was a cook for many years. So many different tips and tricks home chefs use. I will try the vinegar and lemon juice add ins also in my chicken based stock. Thanks for sharing your stewp recipe and how toos with us. Can’t wait to give them a try.

Try putting the onions in the refrigerator. I haven't cried but twice in 20 years of doing this. Cold onions seem to have some control of their properties when as cold as the refrigerator. Also, if you have trouble removing the smell from onions and garlic from your hands wash your hands with a silver spoon. I was skeptical and then tested it. It works! 🧡🧡🧡

Alicia, you fan make stock from rotisserie chicken also. Ehrn you buy it make bone stock. Nana can hrlp you. Boil the carcass after getting what you feel you can get of meat and then 10 to 13 hours slow cook in your Small cooker. I go even 24 hours to get as much as I can from it. I just put water to the yop and watch it after the rendering. Bone broth is so healthy for our families!
In the Prarie times you cooked as long as you got flavor.
