The BEST Vegan Walnut Taco Meat

- This easy meatless taco meat will blow away even the carnivores!
Just 8 ingredients needed and can be easily meal prepped!
Use this for tacos, quesadillas, enchiladas, taco salads, pizza and more!
Allergens: Walnuts. (Can be Top 8 Free otherwise)

Ingredients
2 cups walnuts
1 red onion
4 cloves garlic
1/4 cup sun dried tomatoes in oil (*See post if avoiding oil)
1 tbsp avocado (or olive) oil
1 tbsp taco seasoning
2 tsp soy sauce (*See post for soy free options)
1 juice of a lime

1️⃣ Soak walnuts in a bowl, covered with water for at least 30 minutes. *See post for tips on prepping ahead
2️⃣ Drain walnuts. Put them into a food processor and pulse until you have meat like crumbles. *Be careful not to over process or you will end up with walnut butter.
3️⃣ Chop onions, garlic, and sun dried tomatoes very fine.
4️⃣ Add oil (or stock) to a skillet, and saute your onions until translucent (about 2-3 minutes).
5️⃣ Add in the garlic for 1 more minute. Sprinkle the taco seasoning across and stir to combine.
6️⃣ Add in sun-dried tomatoes. Cook for 1 more minute. Add in the crumbled walnut and stir very well.
7️⃣ Pour in the soy sauce (or substitute) and the lime juice. Stir well. Cook for another 4-5 minutes.
8️⃣ Take off the stove and serve.

Just add a binder honey like an egg substitute, flax seed egg, follow your heart , etc with a little flour or bread crumbs 😀 to turn into a burger or meat ball. Just a thought. Luv your videos

A binder would be using mashed black beans or lentils works really well for patties. Sweet potato as well

I just wanted to come back to this recipe and say I made this and was quite skeptical of how it would turn out but IT WAS AMAZING!!! I added a few tweaks and will be making this recipe over and over again. Thank you for a lovely recipe!
Here’s my version:
2 cups walnuts
1 red onion
4 cloves garlic
1/4 cup sun dried tomatoes in oil, plus a few extra tbsp of the oil
A few dried mushrooms, rehydrated in water and red wine
2-4 tbsp Tomato paste mixed with some water
1 tbsp avocado (or olive) oil
2-3 tbsp taco seasoning
1 tsp soy sauce
1 tsp miso paste and water slurry
Splash of balsamic, high quality (optional)
1 juice of a lime (optional)
1/4 to 1/2 cup of water
1. Soak walnuts in a bowl overnight.
2. Drain walnuts. Put them into a food processor and pulse until you have meat like crumbles. *Be careful not to over process or you will end up with walnut butter.
3. Chop onions, garlic, rehydrated mushrooms, and sun dried tomatoes very fine.
4. Add oil to a skillet, and saute your onions and mushrooms until translucent (about 2-3 minutes).
5. Add in the garlic for 1 more minute.
6. Sprinkle the taco seasoning across and stir to combine.
7. Add in sun-dried tomatoes with a few tbsp of their oil. Cook for 1 more minute.
8. Add in the crumbled walnut and stir very well.
9. Pour in the soy sauce, miso paste/tomato paste water slurry, and a splash of high quality balsamic. Stir well.
10. Cook for another 4-5 minutes. Add more tomato paste and water as needed to add a bit of moisture to the mixture. I also added some extra sundried tomato oil here. Before removing from heat, stir in lime juice (optional).
11. Take off the stove and serve.

Just an accident discovery on my part I’d like to share- if u toast the walnuts first then boil them about 30min, u don’t have to soak overnight neither boil forever lol

pretty good, but a bit too much wallnuts for me. I replaced half of the walnuts with 1/4th cup red lentils (before soaking) and it worked out just as well and became much cheaper. thanks for the recipe

Maybe it’s just me, not sure what I expected exactly but this tasted very much walnutty. I was hoping to make it and fool my family but the taste of walnut was so strong I couldn’t even fool myself lol but after reading all the comments I’m thinking maybe I did something wrong. My walnut skins did look darker some even dark brown/black than the ones he soaked in the video not sure if that added to the bitter taste but I was really hopeful to use this recipe in replacing ground beef. Would appreciate any feedback

@@jacquelineherrera4373 Will do. It seems that whatever is used, it all comes down to the seasonings. I've seen and tried recipe for fake hotdogs made from whole carrots!! Lots of spices, sage, oregano, liquid smoke, etc.. used that were used for pork. Just replace with a veggie for the animal. Tip is to marinate overnight.
Oh, almost forgot, if you try the carrots whether for taco or the hotdogs, boil in water until tender, then submerse in marinade overnight. Gotta get veggies soft to absorb the spices. Cauliflower softens quickly and sounds like a good ingredient also!

Silly me, I should have watched the video more thoroughly! I did the recipe but I was worried about over processing it and it ended up too crunchy! The taste was amazing and now that I have looked closely at the texture, I can see where I made my mistake! Can't wait to try it again as it I soooo easy!!

Thank you so much for this recipe it came out awesome and I tweaked it a little bit for my own family needs, just a little bit of cooked lentils and sun-dried tomatoes instead of fire roasted came out so good.
Also I haven't tried it yet for this recipe but from my other recipes I've found that tapioca starch is a pretty decent ingredient to be the staple of keeping stuff together.
Gonna test it out for next time. Have you found anything yet though? Noticed this video is 2 years old

@@MakeItDairyFree Update: It was super tasty, but my walnuts were still slightly crunchy and therefore distinctly walnut-like in the mixture, despite being soaked for a few hours longer than overnight. So, next time I'll soak for two days, and see what happens. Thanks, again, for the recipe!
@@tamcon72 Thanks for sharing. You could add a splash of veg broth and let cook a bit longer if you think it still has a crunch. It won't be completely soft but it shouldn't be crunchy
