In correct flash/blast freezing, the ice crystals are small enough to not prevent damage without salt. Be careful with paper towel due to fibers getting stuck.
Thaw, then rinse and pat dry. Try again and don't feel bad, I usually have two or three fails until I learn any new thing lol. Keep trying and have fun :)
After salting the fish, do you just leave the salt on the fish and wrap it to put in the freezer? Or would you remove the excess salt somehow and then proceed to wrap it?

I followed the directions. The salt was not absorbed by the paper towel. After defrosting and roasting the fillets, we ate salty fish. Not a do over.

Take it from the freezer and leave it in the fridge overnight. You want to thaw it as slowly as possible.
