My husband is lactose intolerant but loves cheese - needless to say we've ordered a bag of lactic acid and are eagerly awaiting its arrival so we can try your potato cheese recipe and Thee Burger Dude's cream cheese recipe!
You can also make it using a whole can of chickpeas. Aquafaba and all. Just dump the whole can into a pot, add nutritional yeast, lactic acid, and a little tapioca starch for thickness. You just need to heat it up and let the flavors meld together for a few minutes and it should be delicious. Of course, feel free to add pepper or salt or whatever else you might like. I usually pour it over potatoes and broccoli for a very filling meal.
Just so you're aware, aged cheeses have most of their lactose converted to lactic acid. I'm not advocating eating dairy, as I am a vegan too, but I used to be lactose intolerant myself and found aged cheeses (in the before times) were fine.
@@PlantBasedBistro yeah, he can eat small amounts of mature cheese such as extra sharp cheddar or parmesan, but everything else is a no-go. There are times he wants an extra gooey grilled cheese sandwich loaded with American cheese and we've been getting Violife for that. We're excited to try the potato cheese! We also made the vegan cream cheese last night and it's resting in the fridge as we speak! It feels good to go plant-based, too.
If you havent tried cashew cheese you must!!!! For that cream cheese flavor… the potato cheese is surprisingly also amazing. You may have to work out the proportions of ingredients for his preference but you are well on the way to your goal!!! Congratulations! You found it!

If you can't find Lactic Acid, boil carrots and cauliflower with you taters and blend with Maggi and Better Than Bouillon (Vegetable) and two tsp of lemon juice. The cauliflower will help thicken up the sauce and the carrots will enhance the color. 😁👍🏾
Really like potato cheese sauce and I use cooked carrots and powdered mustard for a sharper taste. Adding the corn starch helps change the texture depending on how you want to use it. Yum!
That's amazing, and really encouraging. I thought of a cooking challenge you might like. Can you make a plant based meal from thermal cooking only (cooking only in thermos or a thermal cooker)? Since it uses so little energy it might be a nice idea for camping, summer cooking. As always enjoying your channel.

So lactic acid is amazing for this cheese, but any acid will work to give it the sharp sour flavor. You can even use pickle juice, sour kraut juice, or anything fermented to get a similar flavor. Just watch how much you add because too much will make it taste like pickles.

Lol. 😊 It looked really tasty and I want to make it but authentic chopped cheese is on a bodega hoagie roll, with mayo, lettuce, tomatoes, ketchup and your chopped up burger patties. I think this is the first time I've seen a potato cheese recipe that didn't include vegan milk. I don't know what it is but most people use vegan milk with their cheese recipe and that tastes foul to me. So I'll definitely have to give this one a try!
The original version I made of this cheese used a little vegan milk, but I already added the lactic acid so the milk part was kinda unnecessary. It's not needed unless it places a major role in texture like a cashew based vegan cheese. I think even with my last recipe I did with it I could go back and leave it out and it would be fine really!

Where are you always vegan or did you start out as a meat eater? Do you keep track of your macro nutrients since a lot of the vegan cheeses and other substitution recipes don’t necessarily have a lot of protein in them?

Gotta say though - I have a really hard time believing that a boiled potato can approximate beef in even a remotely convincing way (other than maybe appearance).
If you are going to puerto rico please spend your time in places like aguadilla San Juan mayaguez follow that route and ponce do not head to any other parts the crime is wild and once they see you they are 100% gonna abuse you there are many people that speak English but yeah stay in those towns and in a hotel go stay in mayaguez it's the cheapest and we'll safest

Eating animals is completely unnecessary so the suffering and death to both animals and humans in eating them can't be morally justified. If tacos originated using human meat, you wouldn't use that as a justification for cannibalism nowadays.

Then I feel good as heck about it.
