  • Meet Mr Massimo Bottura, the owner and chef of Osteria Francescana - recently named the number one restaurant at the The World’s 50 Best Restaurants Awards.
    MR PORTER travelled to the small city of Modena in the Emilia-Romagna region of central-northern Italy - home to slow food, parmesan cheese and fast cars.
    We spent the day with Mr Bottura as he cooked us his signature dish, Five Different Ages Of Parmigiano Reggiano In Five Different Textures And Temperatures, relaxed in his house, and met up with local artist and friend Mr Giuliano Della Casa.

      Damn I just found out that Ferrari, Maserati, Lamborghini, Pagani and Ducati are all produced in the Emilia-Romagna region; even as an Italian I wasn't aware.

    This is for those complaining:
    I have been a chef for 12 years, managing hotels, restaurants, cooking in mom and pop shops, fine dining and most things in between.
    When you walk into a restaurant like this, you KNOW the food is going to be good, amazing even. However, the dining experience is what you are spending money on. Your time on. Your loved ones time on.
    To say "I can't experience this food, in this setting anywhere else in the world" is powerful.
    When I was in Japan, I experienced some of the best raw fish from tsukuji fish market I have ever had. I paid around $9 for some rice, a few slices of fish, green onions and soy sauce. It was amazing. I was smelling seafood, I was feet from fisherman who had been out at sea all morning. I was surrounded by things I absolutely could not experience elsewhere.
    When I was visiting Maui, I had Kailua pork, Roasted in the ground. We ate it on the beach in our sandles with friends. We had drinks. We could smell the ocean. Smell the pork. Hear the waves. See the sun setting. I can find that anywhere else.
    If I could visit this man's restaurant in my lifetime, I would expect an experience I could never ever forget. I would easily pay $100 for his menu, his experience, his setting, his craftsmanship.
    Good food is easy to come by these days. Hell, I am surrounded by it where I live.
    Experiences with food? True, one off experiences?
    Now that, my friends, is hard to come by. Stay hungry, much love.

      This is possibly the most pretentious wannabe-intellectual soliloquy I will ever hear in my life. This is every hipster at an art gallery. For this existential experience I thank you, now this, my friends is a crescendo of verbal mastery with symphonies of thought and poetry. Boy do I smelling a good fart.

      Their degustation menu is actually 250$ plus the wine you get to 400$ (minimum, it depends to what wine you order).

    I love how he calls his restaurant a "laboratory of ideas." That's exactly how startups are referring themselves. And I feel it's the right framework through which we should evaluate how to operate.

    I am a 14 year old with a huge passion for food.Everyone here thinks he’s arrogant or pretentious but i only heard a man who spoke about his love for art and food.He really spoke from his heart and i respect him.I hope one day i’ll be able to be just like him.

    I don't really get the hate since he's actually one of the nicest and most positive guys in the business. At the moment his main occupation is taking care about his network that gives free food to poor people

    The first thing I did when I got a break from an assignment in Afghanistan was to eat lunch at Osteria Francescana. I literally got off the plane, rented a car, and went to lunch here. It was just what I needed.
