    Just made this, olive (not virgin) oil because I was not going to buy a whole bottle of walnut oil for 1 recipe, and it was SO GOOD. First time having both beets and goat cheese and both were delicious :)

    It took me 42 years to finally give beets a try (thanks, Mom). So delicious! Definitely going to give this recipe a try. BTW: You're hilarious, Chef John.

    Oh my god Chef John, I love your videos. I watch at least 3 or four of them every single day and until now, it was simply for my strange and voyeuristic pleasure of watching cooking videos. But recently, I actually cooked on of your recipes and Chef John, you are a fantastic teacher. You instruct so well in the videos that my dish came out perfectly and now I'll never forget how to make it. Plus, your jokes are hilarious and I love that signature voice. :) Love you Chef John. Thanks for spending time on teaching us mortals your divine ways.

    I dont know if people in America eat pickled beets but here in Quebec its very popular. I just made my first batch ever 2 weeks ago when the 10 pound bag of beets was 99cents at the grocery store. Its amazing!

    Just finished making this recipe. Pleased that the sweetness of the beets comes out through roasting. Probably the most unique recipe I have tried but really enjoyable. Thanks Chef John!

    I'm gonna have to try this since I have a few beets sitting in my fridge. I don't know why anyone would dislike beets, must be people who've only ever had it out of a can, like mose situations with disliking certain foods. I love to chop beets into thin widges, drizzle with coconut oil, salt and pepper and just roast in the oven, it almost gets crispy like a potato wedge. I could eat that by itself, pretty tasty.

    Bless you for putting up with my expat lonliness! I was just devouring the fresh beets our friends grew in their garden. We had them with butter, salt and pepper and I was shocked at the fresh life of the root you can taste. My mother, Momba, Morticia Addams herself in a corset and long hair, said, "The only reason you don't like a food is because you've never had it prepared correctly." She would say that, but there was some truth in it all! xoxoxo

    Beats have the most beautiful color..my grandma used to tell me to eat them to add color to my cheeks. I absolutely love this recipe!

    I have NEVER liked beets but needed to lower my BP naturally and learned that beets would do the trick. I tried a different roasted beet recipe and was pleasantly surprised. Now I will try this one because... Goat Cheese. Anyway, thanks for the laughs and the great recipes, Chef John. I have used many of them.

    I was born in Ohio in '57 and "Harvard beets" were in a jar and nasty, so I hated beets UNTIL I had a neighbor's home grown stuff. Greetings from Paris, France. I can buy the beets roasted already and still with the skin on here in the greenmarket OR ... roastin' time! We have walnut trees in Brittany but are selling that farm. Yes, I am lucky, but yes, I miss the USA. Thanks for this recipe and putting up with my chat. xo
