I've made this twice (one pack of beetroot over two nights) and the balsamic beetroot and sesame is absolutely fantastic. But I've come to the conclusion that I don't much like Roquefort, and that kids would hate it. I think feta would be a good substitution so I'll try that, next time.

I know im 10 years too late for this video, but I have become a massive fan of beet cooking. Specifically red beets for me. I love using for more sweet products, and have actually created some of my own recipe's from them. I even came up with the idea for a sweet red beet gravy that you can use to pour over Yam's or Squash. Such a versatile ingredient that is underappreciated.
I made this several times now, switched to roquefort to some less expensive danish blue. It IS as good as it looks or even better, the combination is amazing. I suggest everyone watching this trying it out, its not expensive and much easier to make than it looks!
I cooked this dish like 3 weeks ago for the first time and trust me, since that I did it literally like 7-8 times.its just amazing and its good with almost anything.well done
@ofdiscordia I understand but he did say they are pre-cooked and that they BAKE them, which I doubt as I have worked with beetroot and only boiling them produces as much juice.
what are you talking about :S the ones in the package are pre-cook. If you buy it fresh, you have to cook it, and it takes a lot of time. And there is nothing wrong with buying the package one.

Obviously, during Cook-a-long Live, he's working with a lot of home chefs so he has to modify what he might do (have his staff roast the beets) for home chefs cooking with him. Alot of people don't like to cook/don't know how to cook. No need to burden them with one more thing to do (roasting/boiling beets) and better to let them know that they can buy pre-boiled beets.
I would say the main reason is it does very little to affect the flavour. That's the rule to all cooking: will this give me the best flavour? Precooked beetroot still tastes a hell of a lot like fresh baked beetroot.
The dish is about supporting and complimenting the beet flavour, though, not the cheese. Of course it's going to be a less than prime presentation of the cheese. You could always just use a generic blue cheese, I would imagine. As long as it's not too dry.
if you don't find roqufort cheese goats cheese will work and I would add some mint for garnish....maybe a few slivers of sour green apple on the side! he said "spring time dish"
i have no idea what balsamic means, i sorta know that beetroot is probably the root of a beet... and i have no idea what roqufori is. but this is fucking delicious
You're missing the [attempted] sarcasm of the original post. A few contestants on his Hell's Kitchen [US] tried to get by on Ramsey with frozen or packaged items in their dishes and were castigated for it; and now Ramsey is using a packaged food item. Like I said; it was an attempt at sarcasm and out of context for this video so the sarcasm failed. I wouldn't call the first post idiotic; just a fail.

Why not toast the sesame seeds first, put them aside, then do the beetroot? Why used two pans?
