  • I struggled with gestational diabetes as a chef and food content creator, and although I'm not proud of it, I wanted to share my story to help others like me feel less alone. I wish I was a beacon of hope and recipe inspiration during this time, regardless of my restrictive dietary needs, but the nausea on top of everything else took me out of commission. This video rides on the coat-tails of my previous video where I shared about my sudden Bell's Palsy diagnosis while pregnant. So when I found out that I had gestational diabetes too, it almost took me down! It got easier towards the end, but the beginning was rough! Here's my story, along with why I'm actually thankful I had gestational diabetes in the end! Thanks for watching!

    Yay YOU, for getting thru that! I had gestational diabetes with my 3rd child (a daughter) at 36. I was shocked as well. I had quit many things already (cigarettes, etc...) and now God wanted me to give up my CHOCOLATE TOO???!!! I hated life at that moment, but, apparently, we can do anything if it's for the kids. So eventually, I grew to like my non-sweet, real food. Oatmeal without sugar or fruit or even milk! Boy, did I enjoy that 1st cup of coffee with cream and sugar in the hospital after delivering a healthy baby! When they asked me if I wanted that, I couldn't believe it, and when they said yes, the doctor had given the ok, i was ecstatic! I can still remember how good it tasted and how much i enjoyed it. I'm now 4 mo away from being 69, have fatty liver, diverticulosis, and high bp. Back to the special diets I have gone... I'm now low-sodium, low-fat, gluten-free and struggling with learning how to cook for myself. I STILL watch your Ahi poke salad video, cuz that is the BEST recipe ever and now I buy ahi and pretty much have it on hand for when I'm craving protein. I eat lots more fish (it is the perfect meat for my body), very lean ground turkey, and boneless, skinless chicken breasts for meat. Many, many, many salads (I make a great salad now and use balsamic vinegar, avocado oil or EVOO, and lemon juice for dressing). You are a hero, never forget that. God has now equipped you to consider all kinds of things people have to deal with in diets. You are uniquely qualified to help so many others. Thank you for your courage in sharing.     I really wish I didn't struggle with this as much as I did, especially as a chef who should know a thing or two about food and adjusting to dietary needs, but let me tell you...this almost took me down!

    oh gosh😮 how did you manage that❤ it is quite commin among my pregnant friends .yet now🎉 i am sure you mastered something from this experience❤can't wait to watch and learn

      It really pushed me to my brink to try to muster up healthy foods I could actually eat without throwing up even on this diet. It was a hard time for me- much harder than I'd like to admit. I'm glad I did learn a lot from it though. Sorry your friends had it too.

      You're telling me! I used to call her miracle baby but she and I went through so much together so she really is a miracle. One day I will share her birth story. It was wild!

      Yes for now...but I'm a little nervous because I have to get another routine doctor's check up and I'm afraid of what they'll say because I had been eating way more carbs now...like "normal," so I'm trying to taper off again.

      Thanks for your kindness. I feel like it was a perfect storm with one new health concern after the other for a while. It definitely was hard to not be discouraged during this time, but having our cute little baby helped! I'm just thankful to be coming out of some of these things now and there were many lessons learned!

    I totally remember telling you to start your timer. Feels so long ago. Looking back, God had a plan for it all and I'm so thankful to see you and Taylor healthy and happy

And yes I truly believe God had a bigger plan and reasoning for me to have gone through all those health things when I did. Thanks for walking by my side during those times! ❤

    have you tried a continous glucose moniter for 14days to see what carbs make your blood glucose spike.its a game changer

      I did try that...I failed to mention it in my video, but for some reason...maybe it was the kind I was using, but it didn't work for me, so I ended up giving up on it. But I do hear it's a game changer!

    socially dropping carbs yes feel left out i drop them for my eczema

      Right??? It's the social aspect of it that made it harder. I'm sorry you're cutting out stuff in your diet because of your diet. I hear gluten often has an effect on eczema.

      I guess it's more common to suddenly develop it for your 2nd pregnancy or if you're older...like I was. I'm sorry you had it. I hope you managed it better than I did. I barely scraped by and felt so guilty not being a warrior during the time and posting recipes of what I was eating to help others. At least I'm sharing my story now!
