My problem is getting fresh Njangsa and keeping it from turning rancid. I bought a lot of njanga and stored at home then one day when i wanted to use it it smelled rancid. I washed it well and tried my best but that rancid smell is still there. Do you have any recommendations about how to store it and what to do when it turns rancid?

What’s the proper measurement for njangsa sauce? Like what measure of njangsa is needed vs tomatoes? Is it more tomotoes needed or njangsa needed?
