If I plan to play holding a pick, can I change the index-middle-ring pattern to middle-ring-pinky?

for sure! The pinky might be a bit challenging though. I forgot to mention that in the video even though I had it written in my video notes. haha
When I play with a pick I'll tap using my middle and ring fingers 👍

What if I have different tuning? How to adapt this materials to it?

Same 2-1, 2-1, 2-1 applies. Just need to work out where the different notes are, but you could even just keep a similar shape to standad tuning and if you end up with doubled notes, then this is no problem and can sound really cool!
