3 Day Chocolate Chip Cookies! (WORTH THE WAIT)

  • I am a thorough believer that sometimes in life you just need to indulge. I try to live by the 80/20 rule, and these cookies are definitely part of my 20%. They are so good! Check out the video to see my secret ingredient :) It really makes all the difference!
    I know three days is a long time to wait, but I am telling you, IT IS WORTH IT. The dough becomes less grainy as it marinates in the refrigerator and the flavors meld together to make this gooey, chewy, chocolatey masterpiece.
    Here is the recipe:
    2 1/2 cups flour
    1 heaping tsp baking soda
    2 sticks salted butter
    2 cups light brown sugar
    2 large eggs
    1.5 tbsp vanilla extract
    1 tsp finely ground coffee
    About 2.5 cups semisweet chocolate chips (I use about two 10 oz bags of Enjoy Life mini chocolate chips) (I personally like to do half dark chocolate and half semisweet chocolate!)
    Maldon sea salt (to be sprinkled on top of cookies after they have baked)
    -make dough mixture (first beat wet ingredients in a mixer for 7 min. then add dry ingredients in batter until JUST incorporated -do not over mix dry ingredients or cookies won’t rise properly!)
    -cover dough and place in fridge for 3 days (just do it)
    -use medium sized cookie scoop to fit 12 dough balls per sheet pan (this will make about 4 dozen cookies)
    -bake at 360 degrees F for 14.5 min (it will look underbaked but it will continue to bake on the pan once it’s out of the oven)
    -sprinkle Maldon sea salt on top while they are still hot
    -let cool completely on pan
