Tim discusses the basics of getting your fire started, maintaining temperature, tools needed and how to heat a basic dutch oven. He even shows you TWO beginner recipes that you won't want to miss.
SAUSAGE AND CABBAGE
3 beers
1 cup water
3/4 head of cabbage
1/2 onion
1-2 kielbasa sausage
Salt and pepper to taste
Sugar to taste
16 ounces chicken broth
Bring beers and water to a boil. Cut cabbage, onion and sausage into bite-sized pieces and place in pot. Add seasonings and chicken broth. Cook until tender and serve.
MEXICALI PORK CHOPS
2 pork chops
Butter
Salt and pepper
14 ounces black beans
14 ounces tomatoes
14 ounces corn
2/3 onion, chopped
8-10 pickled jalapenos, chopped
3 tablespoons fresh cilantro
1⁄2 cup brown rice
1⁄2 cup chicken broth
1⁄2 cup white wine
1 tablespoon cumin
Dash of Tony Chachere’s
Add butter to deep pan or Dutch oven and season pork chops with salt and pepper. Brown in pan on both sides. Remove pork chops and set aside. Mix together remaining ingredients in pan and stir well. Place pork chops on top, cover and place in oven (or outside with charcoal briquettes) 350 degrees for 1 hour.

Cowboy cooks were highly valued. I read a story based on early deaths in a county in Kansas that said a cowboy started shooting at the cook on a cattle druve to make him dance. The other cowboys promptly shot the cowboy, killing him because it was so important to have a cook! That was in the courthouse of McPherson county Kansas!

I made pork chops, sour kraut, onions and baby potatoes in one of my Dutch ovens. Just greased it real good so the acid in the kraut wouldn't taste metallic. Amazing!

I love cooking outside!
When i used to go camping & backpacking, we'd always start out our first night near the vehicle, cuz we'd cook up a nice beef (or just veggies) stew. So, we'd have a lot of heavy stuff that we didn't want to backpack with. But we'd fill up on this stew the first night, and maybe finish it off for breakfast if we had any left. (Along with bacon & eggs, of course)
When making that stew, sometimes I'd see a lizard or a grasshopper come by, get too close...
I'd throw 'em in the por!
Yeah, we'd have lots of carrots, celery, taters & bell peppers, along with nice chunks o' beef in the pot. Cook it 'till the tators made a nice thick broth, then it's time to eat!
We'd have all our friends aling, too. That, plus the food, is what made it special.
Mmm, mmmhhh!
Love it. Then we'd have to rely on freeze-dried meals if we backpacked the next day for a few days or so. That was fun, too, even though the food wasn't as good.
That's why that first night was so important!
I've thought lately that i might make a fire pit in my back yard to do that.
Wish i had a farm, though. Or at least a bigger back yard, maybe borderin' up to some woods, instead of this tightly-spaced neighborhiod.
Y'know, when we first moved in, we tried having a "cookout" in the front yard, in our driveway actually, so the neighbors would smell it and get curious, then we'd invite them over to get to know 'em.
I don't know if any got curious, but the only one who came over was the nosey guy across the street, but he came the next day, when i brought fast food home. We're still unpacking, getting everything set up, he comes knocking to ask questions, i guess he wanted to see if we were gonna be decent neighbors. Hardly spoke to him since, after more than 10 years. Yeah, turns out, he's this "bad" neighbor, lol. We've talked to other neighbors since. Mostly ppl just keep to themselves.
We do it up right on Halloween, get LOTS of kids & whole families coming to see our scary decorations! And candy, cuz we have the good stuff
We also decorate on Christmas.
Anyway, have a great home-cooked meal on an outdoor fire. Yeah!
