- In July 2021 we published the Ratatouille video shot inside Yannick Allenò's 3 Michelin star restaurant in Paris, with Martino Ruggieri and his brigade. A year later we go back to this French classic but from a completely different perspective. Paolo Griffa of the Grand Hotel Royal in Courmayeur, the only Italian cook to have received the recognition of master pastry chef, presents a fruit-based summer version of the spectacular recipe celebrated by the Pixar movie. A fresh and colorful dish, the evolution of a fruit salad in balance between abundance, variety and the attention to no-waste cuisine.

How does this respect the ingredients of a ratatouille? Something that the Italian chefs on here are always mindful of when critiquing interpretations of Italian classics. Whilst I can respect the high level of proficiency of the Chef this has nothing to do with ratatouille other than “aesthetics”. I don’t really understand this process. It’s a beautifuy executed dessert which resembles the appearance of ratatouille but it doesn’t follow any of the cooking process. What is the difference between this and making a Carbonara with mushroom, cream and parsley? Come on Italia Squisita’s you’ve got to be consistent!
@@CBEEBLE qui il piatto è buono e si ispira all’originale, fare una carbonara coi funghi, prezzemolo e prosciutto oltre a fare schifo non si ispira in nessun modo, ma va solo a rovinare la ricetta originale

Very clever spin on a dare I say iconic French dish. It's partly because of the name they chose for this dessert is why I clicked the video in the first place. "Sliced veggie and fruit cake with jam" just doesn't have the same ring.
Are u offedend for name used to? I mean, clearly he said that isnt a traditional ratatouille, since he using fruits. What did u expect to cook it with tomato sauce to call properly "fruit's ratatouille"? It s understandable for me.

@@CBEEBLE that's not a double standard. It's a fruity dessert which take inspiration from a traditional vegetable dish.
As example, I tasted "fried eggs" that wasn't fried eggs at all but an ice cream that was shaped as them.
