Would that not bea sonewhat traditional wagyu raised in america? Aka American wagyu? Logic isnt easy for everyone, but you should still try..
@dannythompson1948 that's not what American wagyu is though. To my knowledge most producers of American wagyu just breed their own cows, and give then a fraction of what japanese cows get in terms of care.

I'd gather up the juices, and use a little flour and corn starch to thicken it, make a nice gravy, and toss all the little bits and pieces of brisket in after carving 😋😋😋
Multiple butchers near me sell wagyu brisket for between 8 to 8 1/2 dollars per pound. You compare that to a Walmart who's selling it for around $7 a pound for USDA choice. It's not that unbelievably expensive.
I have one on the pellet smoker now. Overnight. While I'm at work. I started it at 11 pm at 195. Checked on it at 3 AM and internally it was already close to 150. I'm concerned. It's 9 pounds I figured 9-10 hours. Dinner is at 3 and this sucker is going to be done wayyyyy too early. Should I put it in the oven to rest or what? It's my first one, lots of pressure. Did I mention I am concerned

The tenderness of the flesh versus actually if it's done. I'm obviously not afraid of undercooked meat but when it comes to smoking it really is an art form.

I put mine on top grill,put pan under it for drippings,300 I don't have 275 when temp.on meat clears 205 you are ready 5 to 6 hour
