Why not just cut the head completely off. Then you know it's dead and can't feel anything. The Chef processes it right away, so I don't see any problem (less fresh) with immediately killing it.

Not only Japanese, but many other cultures have the same techniques. The meat is considered cleaner using that method.

Those are called agonal movements, like you'll see some animals do after the brain is destroyed, disconnected. Chickens are a good example.

Why not just cut the head completely off. Then you know it's dead and can't feel anything. The Chef processes it right away, so I don't see any problem (less fresh) with immediately killing it.

Brain-dead is different from complete dead. In brain dead, the heart can still work for some time (due to internal pacemaker), pumping out as much blood as possible out from the carcass.
Not only Japanese, but many other cultures have the same techniques. The meat is considered cleaner using that method.

When you kill an animal it's normal for it to move or convulse. Some move more than others. Dead Octopus will squirm and move a lot if you sprinkle them with soy sauce even if they have been dead for a while.
it was brain dead meaning it cannot feel any pain anymore because we all know the brain is what controls the nervous system. the squirming is a natural reflex of the body but again, it doesn't feel pain anymore. it was dead but the body isn't.
