    那個⋯大家可以找一下資料,很多人都誤會了,這種作法並不會使魚比較痛苦。
    第一刀下刀時魚就腦死了,用銳器戳脊髓時魚身的扭動是神經反射,與痛覺無關,魚早已死亡,是神經反射驅動肌肉。
    當然畫面還是怵目驚心就是了⋯⋯

    It surprises me how calm this eels is when it is taken out of the water and gets prepared to be processed. I sometimes catch them by accident when going fishing, and usually they struggle very badly and are a nightmare to dehook.

      Those are called agonal movements, like you'll see some animals do after the brain is destroyed, disconnected. Chickens are a good example.

      저는 마취 안하고 치과에서 신경치료를 해봤는데,, 의사가 해준다해놓고 마취를 안해서,, 혀깨물고 죽고싶을정도로 눈물이 나면서 고통스러웠던 기억이 있네요..

      When the first knife hits, the eel was immediately killed. The reason why it was still moving was due to the neural reflex. The cells are still not dead thats why the body was still moving.

      Same. I am an unrepentant carnivore and hardly a PETA activist, but this was really gruesome and hard to watch. The fact that it was still alive after being hung on the hook was too much. Humans may be at the top of the food chain, but we don't have to be so cruel about it.

      Another armchair lecturer, the eel has a nervous system that stretches the full length of it's body, you could see the reaction and spasms after 30 minutes when he wired the spinal column. Simply cruel to leave an animal partially decapitated for that length of time. Thats Japanese for you.

    The ancient Romans used to keep them as pets. A number of Romans seem to have really loved their pet eels. The orator Quintus Hortensius was very was very fond of the eels which he kept in the fishpond of his villa, he is reported to have wept when one of his eels died. Antonia (the daughter of Marc Antony and mother of the Emperor Claudius) is said to have fastened earrings to the pectoral fins of her favorite eel. This was probably a moray or conger eel, since they are the only eels which have pectoral fins that earrings could be attached to.

      Fascinating. Thank you. However, I find it extremely unlikely that they would be moray or conger eels. They are both saltwater eels. Hard to see them survive for a long time in a freshwater pond. On the other hand, all eels have pectoral fins. Freshwater eels have them too. I do not see why large freshwater eels could not have earrings attached to their pectoral fins. Could you share your source? Thank you again.

      Morey eel is a saltwater long fish it has to come up to breathe oxygen and yes it can be used as food. However its more of an unscale fish like catfish rather that a fish with scales.

      The purpose of ikejime is to kill the nerves so it doesn’t damage the actual meat, hanging is to let the blood drip so it doesnt contaminate and prolong the shelf life. Two different things

      He killed the thing in one chop. It cut the spinal cord of the eel and it has died at that moment. What you see is nothing more than muscle spasms that every animal, even human would do after death. Like how a chicken can still run around with its head gone or cows or some other dairy farm products.

      They did cut the head off lol, they severed the spinal cord. Cut it completely in two. If they cut the head completely off, it would've been difficult to hang to let the blood drain. But that eel didn't feel any pain once it's spinal cord was cut.
      The brain had no way of sending pain signals to the body, and the brain had no way of receiving oxygen. So even if the animal was 'alive' after it's spinal cord was cut, which is highly unlikely, the lack of oxygen would've killed with. It literally couldn't feel any sort of pain.

    Why not just cut the head completely off. Then you know it's dead and can't feel anything. The Chef processes it right away, so I don't see any problem (less fresh) with immediately killing it.

      this looks like torture i know, even the say it wont feel more pain because brain damage i doubt it, and this way is to keep it alive the longest time possible, you can see the flesh still convulsing when is in the plate, i gues this is why they dont kill it fully since beginning, but i dont know how much is worth it a dish like this fresh at cost of the suffering of the animal, i would not eat or buy this dish.

      Brain-dead is different from complete dead. In brain dead, the heart can still work for some time (due to internal pacemaker), pumping out as much blood as possible out from the carcass.
      Not only Japanese, but many other cultures have the same techniques. The meat is considered cleaner using that method.

      El primer hachazo le da la muerte cerebral, el pescado ya está muerto, cuando lo cuelga solo que el gancho y el mismo cuerpo tiene las ramificaciones nerviosas y hace que se mueva, pero ya está muerto. Al agonizar si fuera el caso, sale del cuerpo el ácido láctico ya que se estresa y hace que la comida sea fea y amarga, por eso te digo que no les conviene que sufra el pez.

    aclaro que desconozco completamente dicha técnica de sacrificio, según lo que investigue dice que es muerte cerebral instantánea y que reduce el dolor pero no termino de entender si el animal sigue sufriendo aun después de esto... el movimiento cuando le introducen el alambre no se si sean espasmos pero lo de la garganta y lo demás no se ve como si fueran movimientos involuntarios, que no se supone que una vez destruido el cerebro ya no hay posibilidad de moverse mas que por reflejos musculares?? solo estoy preguntando si en verdad el animal deja de sufrir desde el momento que destruyen su cerebro por que a mi no me lo pareció, pero aun así si alguien sabe y me puede explicar se lo agradecería. (aclaro no estoy llorando ni criticando los métodos solo tengo curiosidad por este tema ya que quiero estudiar gastronomía y quiero saber de todo incluso como funcionan estoy métodos)

      기본적으로 생선 요리는 머리 뒤쪽을 칼로 치는것으로 어느생선이든 우리나라에서도 다 같은 방법으로 죽입니다. 다만 이영상에서 나오는 시메(신경죽이기)는 우리나라에선 하기도 하고 안하기도 하는데 이미 머리친 순간부터 머리 아래부분에 대한 통각은 끊어집니다 신경을 철사를 사용하여 건드리니 몸체가 움직이긴 하지만 엄밀히 말하면 우리나라 생선회는 머리치고 몸 바로 해체하니 별반 나을거도 없습니다. 생선 다 해체하고 나면 생선살과 부산물들은 한참 시간이 지나도 뻐끔뻐끔 살아있지요.

    Moray eels only have nerves in their heads but moray eels have a secondary ‘heart’ in their tail, just behind the last vertebra. This helps to pump blood back up to their real heart. That's why hou make a cut in the tail. The first cut didn't kill the eel at all it died from bleeding out

      When you kill an animal it's normal for it to move or convulse. Some move more than others. Dead Octopus will squirm and move a lot if you sprinkle them with soy sauce even if they have been dead for a while.

      it was brain dead meaning it cannot feel any pain anymore because we all know the brain is what controls the nervous system. the squirming is a natural reflex of the body but again, it doesn't feel pain anymore. it was dead but the body isn't. It was mentioned in the caption that it was dead while alive. I hope that clears your concern and pity.

      Боюсь, что она не мертва - судя по глазам - пока рыба пытается держать глаза на ватерлинии, лежа на боку, ее мозг работает. У рыб нет такого большого потребления кислорода - если бы голова была мертва, он не стал бы втыкать провод в спинной мозг в голове - это было бы бессмысленно. Проволока используется только для того, чтобы быстро убить его. Я пользовался переводчиком, извините за мой русский.

      Вы все такие умные. Вы когда нибудь наживую препарировали лягушку? Там так же моментально разрушают мозг. Однако от её воя сводит жилы у бывалых анатомов. Много нюансов возможно недоконца неправильно сделать и дикая боль обеспечена. Рыба просто звуков не может издавать. Какие вы все умные но на себе никто из вас эксперимент поставить не хочет.
