This regulatory structure functions as protections for the small business owners and the local Yatai culture. It prevents large operators from displacing the small businesses.
i have seen several yatai make two-three trips to open their stalls. those guys should follow this guy and bring pick up for better quality life. those who make 2-3 round trips only sleep for 4-5 hour each day and have no time to rest. you need to go little bit modern to perserve the culture
You are so right to make life a bit easy. I wonder if th stall owners make enough money for a small truck. Even a motor bike (3 wheel) would be a great help to transport a stall.

食物菜色很單調，生意很難火起來
合理的なのは解るけど「何もかもが冷たい」から全く和めないね。
初めは物珍しさがあって一見客が来るだろうけれど他店に比べたらリピート率は少ないだろう。
「お客が作るもの」が完全に欠落してるから愛されないよ。
軽トラでサッとやって来て組み立てて「屋台やってます！！」って。。。なーんか違うんだよなぁって思ってしまうのは僕だけでしょうか。。。いや料理は美味そうだし、しっかりとした信念を持ってやってるんでしょうけど。
汗水たらして年季の入った重ーーーい屋台をえっこらえっこら引いて来て喰わせてくれる料理の方が僕には合ってそうです。。。
わざわざ「この屋台どうやって組み立ててますか？」って聞くんですか？
