The Best Coconut Custard Pie

Easy cooking for busy families
Preheat oven to 350
4 large eggs
1 (3.5oz) bag of flaked sweetened coconut divided between the pies
1 (12 oz) can of evaporated milk
1 cup sugar (you can add as much as 1 & 1/2 cups sugar if you like it sweeter.
2 tsp. cornstarch
1/2 cup butter melted, do not substitute (1 stick of butter equals 1/2 cup)
1 tsp. vanilla extract
1/2 tsp. lemon extract
2 unbaked 8 inch pie shells - do NOT use deep dish OR a 9" pie shell, this is a very old recipe and it will not make enough custard for either one.
Blend the eggs, sugar and cornstarch in a medium bowl. Add the melted butter, both extract flavorings and evaporated milk. Mix these very well. Divide batter between the 2 pie shells and sprinkle the 3.5 oz. bag of coconut over both pies. Bake 35 to 45 minutes until the top is a light golden brown. Chill, serve and enjoy! This recipe does not support deep dish crusts. It will not bake correctly as 1 pie.

Made the coconut custard pies for Easter & they was delicious that was my first time making a coconut pie the recipe was easy , simple & quick to make they taste like granny's old fashion southern recipe , thanks for sharing your recipe I'm keeping it in my collection everybody LOVED the pie's 👍💚😘🌹

I made 12 pies every ma holiday ,started when I was 16 helping my grandma . About 5 years ago ,it became to much so now I just do 2 each of sweet chocolate and potato, pecan and coconut cream .I never cared for coconut either ,so what I do is to not put any in the filling.I toast the coconut and then cover the meringue with it instead.Its one of my most request pies.Thank you for sharing.

I just put my two in the oven, you inspired me! I added coconut extract and maple extract in place of the lemon. Can't wait to try them!

@@Handsthatcook don't worry, I plan on making more when I get more lemon extract. Today I had to use what I had on hand. The flavor is VERY good with the little bit of maple extract. I just ate 2 pieces, I couldn't help it. This is truly the easiest pie I've made ever and so tasty. Thank you!

Buy disposable pie tins and buy some corn starch, it's very affordable. TFW God bless
I have a question honey me and my Mama Joe made a custard pie 20 years ago and it was the recipe in her head so I can't remember but I thought we used flour instead of cornstarch and instead of the pie shells

I will try for Thanksgiving this year. You sure 1 tsp vanilla is enough for 2 pies tho ? Just seems making 2 pies you would need 2 tsp yr the baker tho that's why I'm making sure 😉 👌 👍 tks so much
