Flour will still become compressed over time so getting pre sifted flour is useless because you’ll have to silt it still. This also happens with anything that is powdery like powdered sugar, baking powder and finely ground spices like cinnamon and turmeric

Bread flour has more protein in it than all purpose flour, this is because more protein in flour means that more gluten is produced. There is a slight difference in the crumb of-products made using either bread flour or all purpose flour but they're generally the same deal and do the same job however all purpose flour is more versatile.Also espresso powder deepens the flavour of the chocolate, giving it a richer and more full-bodied taste (kind of like when you let tea brew for a while and it has a really deep, potent and rich flavour) that's why in a lot of chocolate based recipes they'll ask for espresso powder.
