    There is a huge problem with this recipe. Huge. It's just way too easy to make delicious cinnamon rolls. Way too easy. I'm not sure I needed to know how to do this because I'm going to make these far more often than what agrees with my waist line. Thanks for the recipe.

      Its not the roll recipe that's a huge problem.
      It's us after eating too many of those batches of goodness

    I started using this recipe 5 years ago, but immediately started tweaking it. I used 1 cup whole wheat flour & 2 plain, 3 tbsp sorghum molasses instead of sugar. I cut the sugar to 1 cup and increased the cinnamon a bit. I'd put plumped up raisins in the sugar, cinnamon mixture and roll it up. I seldom used icing. (Don't use as much milk. The whole wheat gave it more of a nutty taste)

    I have used your "turbo" and regular sweet roll recipes to make the traditional King Cake treat for Carnival season A.K.A. Mardi Gras in New Orleans. Instead of rolling the narrow way, I cut the same rolled dough into 3 long strips, each about 4 inches wide and rolled them sideways to make them loooong strips. I then braided them and formed them into an oval and pressed the ends together, forming a large ring with a hole in the middle. I let proof and then reduced the cooking time to about 18 minutes, because the dough is not nearly as dense as when in the round 9" cake pan. I then frosted with the glaze. People in my family and at work LOVE!!! it. I have printed the recipe on paper, with a link to your video on UA-cam and have given them to those that wanted the recipe. YOU get all of the credit. I even suggest they watch the video on UA-cam to see how easy it really is. From local bakeries, these king cakes sell for more than $15 for this same size. I guess I am paying the extra $13 for the colored sugar they sprinkle on the glaze before it sets. Thank YOU!

      Years ago I made something similar but not as easy a recipe as this. Instead of putting in cake pan, rolled up dough on the long side, joined into a circle, pinching ends together. Put on baking tray. Then, using scissors, snipped about 3/4 through to give about eight equal sized pieces and turned each cut piece on it’s side to expose the swirl. Leave to rise as usual and bake.

      When you use cream cheese icing, do you have to keep them refrigerated? Because of the cream cheese.

      @@blueterrace i do refrigerate any leftovers, yes. I think that’s wise considering it’s cream cheese. I also live in a desert so we have to refrigerate everything all the time!

    💗 2021-03-22 🍞🥖Steve Gamelin taught me to bake my own bread. I have been making them for almost three years, I mix with dried garlic powder, all kinds of dried herbs, curry, nuts, seeds etc. but also, cinnamon, honey or with extra sugar then you get sugar bread :-) No one makes bread so fast, simpel and much easier as 'Steve from no knead bread'.     Steve's other recipe for these cinnamon rolls taking 12-18 hours for dough proofing turned out delicious. Now I need to try this one, essentially the exact same recipe except for the much shorter proofing time. Being done in one day (about 4 hours or less) is much easier to fit into a schedule. This guy knows what he's doing when he bakes breads and such.

    Thank you Steve for another wonderful video! Just discovered your video's 3 days ago when I decided I wanted to make homemade bread easily and quickly. I've made a loaf of whole wheat bread, white bread and now made cinnamon rolls as well and the family is in awe how great they all tasted and how i'm now such a good baker and it's THANKS TO YOU!! These rolls turned out delicious I did swap out the sugar and used honey instead and turned out great! Thanks again Steve couldn't have made bread and rolls with out your video's !!     I made the no-knead raisin bread and it was wonderful and delicious. No more store bought raisin bread for me. I will bake these rolls next. I love Steve's recipes and have already made several of his no-knead oat bread using his PMDO, poor man's Dutch oven). His recipes are so easy and full proof.     I took these out of the oven a couple of hours ago. This afternoon I used my rolling pin for the first time. I did struggle getting the dough the length and width I wanted, but figured it out eventually. The wifely person of the house was sufficiently impressed and will want more. This is very good. I added roasted chopped pecans and pine nuts.
    Next I get the courage to make pie crust. Having great fun going through all the videos here and trying every thing. I make the honey whole wheat bread twice a week, my sweetie loves it. I no longer buy bread. The quality of the bread has gone up greatly since I quit buying it. 😎

    Lovely fast recipe. My gran made them similar but spread soft butter on dough then cinnamon sugar which gave the rolls a sticky inner delight.

      Right, Rolando? Steve is a genius. My mother introduced me to this recipe a few years ago. Now we're both baking our own bread and enjoying homemade panini sandwiches, pizza, and soup bread bowls. This year, I'm using Steve's no-knead bread to make the croutons for my sausage-apple stuffing, which calls for artisan breads. I will be trying this recipe for Christmas morning breakfast, because I LOVE cinnamon rolls.

    I made these yesterday, following the recipe exactly. The buns were excellent. Don't see the need to add butter before adding the cinnamon/sugar mixture, as some have suggested, but that's the beauty of bread making - you can do almost anything you want, provided the the ratio of liquid, salt and yeast to flour is maintained.
    The only weak point is the icing. While it worked perfectly and tasted fine, I'll sub in a cream cheese frosting next time.
    Miraculously, I had two buns left over this morning. I butterflied them then pan fried them in butter until slightly golden. Superb!!!
    I've made a few of Steve's recipes and all are excellent. Simple to follow, clear instructions and logically laid out, without all of the nonsense you often find in other cooking videos.

    Ok, I've had problems with certain breads and several cinnamon roll recipes not rising in the oven. Beanie green down below mentioned to someone about humidity. That gave me the idea.....I skipped the second rise, and just finished them off, and right into the oven. I got success!!! I always follow every recipe to the T, and even follow the videos step by step, and always have the same problem. It's not the recipes, nor anything I am doing. I am now convinced it's the humidity! From now on, I will skip a second rise, and maybe even not proof the first time for as long as directed. I will just play around and see what works best. No matter how bad I think something turns out, I have people who gabble up anything that comes out of my oven, so nothing ever goes to waste. For that I am grateful! But Steve, I have made some of your recipes that DID come out great. I guess the humidity was lower those days. Thanks!!

    For those of you that need the written out version and don't want to watch the video three times:
    11 oz whole milk
    4 tbsp melted butter
    1-1/2 tsp salt
    1-1/4 instant yeast
    3 tbsp sugar
    1 lg egg yolk
    1-1/2 vanilla extract
    3 cups bread flour
    Cinnamon sugar mixture:
    1/3 cup white sugar
    1 rounded tsp cinnamon

      The recipe I use calls for softened butter to be incorporated into the cinnamon and sugar mixture. But seeing your comment makes me think my Mom used to butter the dough, too, then sprinkle the dry filling atop it.

    you are the King of dough ! I made the dough last night,I let it proof overnight and I made the rolls In the morning ; I substitute milk with one part buttermilk and 3 parts water ,because I ran out of milk ; I did 8 rolls but in my 9 inch pie dish fitted only 7 rolls and for the 8 th one I used a 3 inch ramekin dish lightly greased with butter ; next time I will use ramekins only because the roll raised beautifully; for glaze I used 4 Ts of fresh squeezed lemon juice ; I tried this recipe only because " this dough is very forgiving " and indeed it is ! your measuring cups and spoons look bigger than mine ;this is the best recipe ever ! thank you

    thanks so much for your great recipes! like an idiot i tried a "trending on google" fast recipe that was a complete waste of ingredients! this is 1000 times better! and thanks for the comments saying to spread the rolled out dough with butter before adding the cinnamon sugar. i added chopped pecans as well; worked perfectly. the last proof didn't rise that much; then i remembered when i made his american baguettes, it rises the rest of the way during baking. i added cream cheese to the icing as well. FANTASTIC RECIPE AND EASY TO FOLLOW INSTRUCTIONS. THANKS AGAIN!

    My mom taught me to use the dishwasher method for raising dough you just put the dishwasher on the heat cycle put your dough in the dishwasher lol it's even timed.

    I love cinnamon rolls and I look forward to using this recipe. I do add about 1/2 teas vanilla to my glaze or sometimes a little brown sugar and maple.

    Hello Steve. I can't stop watching your vids. My dough is proofing in the oven as I'm writing this to you. Cinnamon Rolls Baby!     Steve, I'm a new subscriber and new to baking bread. I just started yesterday. You inspired me so much I made a loaf yesterday and today successfully. My husband loves the bread! I haven't done the cinnamon but will make this one tomorrow. You are awesome and thank you educating us.

    I have tried other recipes for cinnamon rolls. All the others seemed to wet! At the rolling up stage .. i made these tonight, no stickiness, theyre just proving now before going intomth oven. Ty ty ty!

      Can u pls tell me whats the cup size here for measuring flour? I have a cup which is 250ml size, says 1 cup
