My pot of stock has been simmering for 4 hours now, smells delicious. Seeing that you added a sweet potato to yours made my get on my bicycle and ride the 2 miles to the grocery for a sweet potato. It already has a deep golden color. This will be perfect in a pot of vegetable soup this winter.
The French onion soup turned out beautifully. It is so tasty. So nice to have some on the shelf. My local grocery had chicken leg quarters on sale for 0.49 per pound. I made another batch of chicken stock using 2 carcasses and 1 leg quarter. When it was all finished, I picked the chicken, carrots and sweet potato out of the broth prior to straining. My dog has thoroughly enjoyed his daily little sample of chicken and veggies. I have a Morkie, cross between Maltese and Yorkie. It’s just for a treat and he loves it!
I love canning stock. I like the idea of adding tomato peelings too. Can't to give your recipe a try. Off topic, did I spot a Norwich Terrier in the background? I have 2 of them.
Hi Carol, I’ve spent the better part of the last two days making your chicken stock and chili beans. My house smells so good. I can’t wait to use these in my cooking. The stock tasted so good before I put it in the canner. I just know it will make great chicken noodle soup. Thanks for all you do!
I haven’t eaten meat for 39 years but when my gran made this she didn’t use salt and picked over the strained bits and gave them to the doggies.........They knew and would sit in her kitchen for the whole time😍
Hi ladies, I am hoping to have someone help my brain, lol. Having taken many food handlers courses and worked in the food industry for many years my brain tells me that throwing scraps in is a good thing for flavour but are you all scrubbing these skins and ends of celery and washing onion peels? I am very new to canning and this sounds like a great time saver to throw things in a bag for later but when I cut my celery off the bottom does not look like it should be thrown in soup, also goes for onion skins? Please help, lol my head is starting to hurt!! Happy New year to all. I just canned chicken soup and have stock on the stove so this info is for my next venture!
Could you clarify for me about potato skins? It’s ok to use them in the stock because you are not canning them, do I understand that correctly ? Thank you so much.
@@carol-thriftychichousewife6231 I was able to find the stockpot and now it is simmering on my stove and while getting it all together I found everything I needed to do the split pea soup..I also have the 915..( love it ) so could can that up today and stock tomorrow..l did the BBQ pork the other day looks so good..after all this I want to do beans and spagetti sauce.. I live in wa state so for me the weather never gets to hot for me..
I have to tell you that my chicken stock is so wonderful. It’s very tasty and beautiful. I used your sweet potato trick and it made the stock a beautiful color. I also made beef broth using the ball recipe. I added a sweet potato to it, too. It turned out great. I’m getting ready to make your French onion soup and can it. I have been making my own chicken broth for years but not stock. I'll be giving this a try! I usually freeze my broth but canning is a better option.

I wash/rinse all of my veggies before prepping or peeling them so they are fine for making stock
