  • This Green Chile Stew has been a staple in our family for years on Christmas Eve. For decades I would make this along with my New Mexico Chili and we would have both for Christmas Eve.. On some rare occasions, I would also have tamales to go with the Green Chile Stew and the New Mexico Chili. Try this recipe out and enjoy it. Our family has since broken into little pieces, so we don't carry on the tradition any longer, except for wherever I happen to be, I will always keep it alive if only for myself. I have decided to share this with everyone else to keep it going. It is a wonderful meal that warms you inside and out. I hope you enjoy it!

    So that looks pretty darn tasty!! Heck, those pictures at the end look like a restaurant menu. Can I get a reservation? Lol

      I made all of those at my restaurant! I make them only for me nowadays, except once in a while, Cindy the neighbor gets some too. How's Jasmine?

      @kadj1016 I'm sorry to report that jazz is gone. Pam put the dogs down for their afternoon nap and she never woke up. Pam was heartbroken. She still doesn't want to talk about it.

      Like my friend Gwendolyn asked me "Is there anything you can't do?".. lol.. Yes, I can cook babe.. Chef Klark at your service! Worked as a chef in a 5 star resort once, besides owning my own Mexican restaurant. Our family had 8 restaurants in 4 different cities! Chef Klark is also the best grill man on either side of the Mississippi River, (depending on which side he is standing on)..lol. I worked in a steak house for like nine months straight in Albuquerque NM, (one of many in my career) and cooked 350 steaks in 90 minutes time each day. My manager wondered how I did it.. but I did all nine months and never had one steak brought back because it was cooked wrong.. He said "My God, I blow 3 or 4 every time I cook, how do you do that?".. I just looked at him and said "Either you have it, or you don't!".. then gave him a big smile. We called those miss-steaks. He offered to triple my salary when I had to quit that job.. Ironically I should have taken his offer, but hindsight is 20 20.. lol. Thanks for the comment Wendy.

      I mention in the video several times that pork works just as well in this recipe.. To be honest mostly I do use pork when making it. My neighbor handed me a whole bag of chicken breast planks, so I used those in this video. I do mention that pork works great in this though. Thanks for your comment.
