I only got my Switch about two weeks ago and it’s already firmly established itself as my daily. The Kami Recipe is really the best coffee I’ve made at home yet, I’m very happy to have come across it
I believe that you are supposed to close the switch at 1:15 and open the switch at 1:45 and if it all drains by 3min then your grind size is on point for your CO2 levels. Other than that everything seems on point and I do agree that 18 black clix is just about right for this technique over the recommended ~20.
He leaves it open for the bloom regardless; 30s of 60g then another 45s of 60g. He plays with the ratios sometimes 50-130 for instance to bring out more sweet notes. The point I was making is that he ends with all 280g of water filtered through at 3 minutes.
@@gabrielofthesun7001 thank you for pointing it out i actually rewatched it last night because i wanted to make sure i didn't miss out on any of the details as i am joining a competition using the Switch. Apparently what i did is a modified version of the Devil's Recipe already hahahaha. But finishing at 3mins is a crucial part of it so i need to change it.
I just came across your channel because it's related to James Hoffmann, but for a channel with not a lot of subs your production is great! It's like something I would see from James. Keep it up, you got a new sub.
Thank you so much for appreciating the production value :) i really work hard to make my videos look better each day :) thank you thank you! I hope you enjoy more of my videos :)
Wow, this was just some random coffee video that appeared in my feed, and I didn't even notice those numbers until I saw this comment. Very impressive quality for a small channel! My new v60/switch will arrive tomorrow, so I'm subscribing for more 🙂
so the, micro fines particles collectively are technically the easiest to extract bec if you think about the qty of micro fine particles in your brewer versus the right sized boulders, they tend to have more surface area. This, in effect, results in over extraction if you are not carefull with your temperature. That's why Tetsu's idea of bringing down the temperature at the last bit is genius bec basically you lower the extraction rate of the microfine particles, hence less bitter.
Also i forgot to mention technically the smaller the particle size, the easier to extract bec they're somewhat softer then. Does that make sense? hehehehe
@@darylbuenocoffee Hi Daryl, I think you have already explained the fine particle and about its extraction quite well. But i couldnt figure out whats "bec" mean.
I believe there will be many people using different grinders for this recipe, so what grind size would you recommend? Fine, medium/fine, coarse etc. Thank you.
This is not exactly Tetsu's recipe, Daryl adapted it. Tetsu does the final pour at 1:15 and then opens the Switch back up at 1:45. That's a noticeably short immersion. I agree with Daryl adding the final pour and then letting the immersion run for at least a minute (maybe even two minutes?) before opening the switch back up.
I accidentally tried this longer immersion today and I really like it with light roast! Reminds me a bit of James Hoffmann's long immersion french press method. To be fair my grind was probably not as fine and the coffee was a little older. But I will definitely experiment with this! This hybrid method has been surprisingly good.
Agree - noted this as well but was really disappointed with Tetsu recipe with 4.0 ode gen 2 grind as it tasted weak and frankly a little colder than I'd like. Longer immersion seems worth a shot (but may make an even chillier cup).
@@jesse1061 ohhhh, this might be an issue of athmospheric temperature. Here in the Philippines where its always hot, the temperature cools down a bit longer than colder countries. Brewing in an air conditioned room would have an effect as well.
Спасибо
Вы объяснили лучше, чем в оригинальном видео. Только купил себе Харио Свитч, сейчас буду пробовать Дьявольский рецепт!

I should look into that Kami Recipe and give it a try :)
What's the "Kami Recipe?" Googling/UA-caming and I haven't quite found that exact one...
What is the kami recipe? Can't seem to find it anywhere on the internet.
"I've always used the Devil's Recipe when trying out new beans" Very interesting !
Thank you for that i also needed a base recipe for news beans
Yes i think this was a really easy recipe to use as base. It actually removes some of the variables in pouring that why.

Interesting what you say about fine particles at 6:00 and how they are the most bitter.

I used a light roast beans from H Proper Coffee Roasters

Yes this is only adapted from the original Kasuya Concept. I will make another video that follows the original recipe 1:1 :)
