    For breakfast I have steel cut oats with banana blueberries and strawberry with 1 tablespoon ground flaxseed and walnuts. For lunch I have a big salad with potatoes or sweet potatoes. Dinners I have lentil tacos, rice bowls, noodle bowls, lasagna with tofu ricotta and a bunch of veggies.

    Another great/informative video Dr. Marbas. Thanks for all you do! One of my favorite ways to eat steel cut oats is with quinoa and sweet potatoes. Steel cut oats and red quinoa take about the same amount of time to cook, and I usually throw in some diced sweet potatoes (about 1/4 inch), no sweetener needed. Breakfast couldn't get much better or much healthier!

    Great video, Dr. Marbas. I love the different ways to use odds and ends from the garden/pantry that exist probably in every culture. Between mixed veg Indian curry, Chinese stir fry, Thai veggie curry, Italian minestrone, veggie tacos, etc. there's almost always a healthy way to put together an assortment of foods into a lovely meal. At our house we often use an Instant Pot to have whole grains and a variety of beans, chickpeas, and lentils available as the hearty, filling base, and then add on the fresh or cooked veggies and top with a tasty sauce and maybe nutritional yeast, depending on the meal.

    I make steel cut oats for breakfast. I set the instant pot the night before. I’ve made them different ways, lately I use a recipe by Jane and Anne Esselstyn with lemon juice, lemon zest and a little maple syrup. In the morning we add fruit. I like blueberries, chopped grapes, bananas most of the time. (occasionally other fruits, depending on what we have). I use my instant pot often two or three times a day. Supper is a variety of things usually with either a rice or potato base. Veggie stews, chillies, etc.& often a salad, Lunch is leftovers or if there are no leftovers, it’s a soup in the instant pot (lentils, or split peas and veggies). I come looking for ideas from plant-based cooks in order to keep being inspired to continue eating this way.

    Thanks Doc, this is HUGE for me! I am a brand new to WFPB as well as a new subscriber and am at the point where I am starting a transition from a 100% fast food to 100% WFPB and this video has answered so many questions for me... I have been watching Dr. Khambatta and Robby but I really cannot afford their coaching and their book doesn't have a lot of recipes. I don't cook or even know HOW to cook so what a struggle. Right now I'm living on green smoothies & Chipotle vege bowls so I've got to find some alternatives.

    Thanks for sharing! Very good to know about the oats! My Mom loves her oats. I'll definitely pass that information on to her! Also I had a friend who was vegan and worked in different restaurants. He mentioned that they often cook and season the beans in animal fat. So always good to ask about how the beans are prepared before adding them if that's important to people. Thanks again for the info!

    You mentioned switching to steel cut oats so your glucose response to your breakfast would be lower. Does it matter how you cook the steel cut, al dente or totally cooked to mush? I always wonder about this, because you can cook even oat groats to a consistency that will resemble rolled oats, if they are cooked long enough.

    Dr. Marbas, what are your thoughts on coffee? I am up at night with little kids and tend to drink 1-2 cups of coffee with a splash of oat milk each morning. Is this ok? I have spondyloarthropathy so I am trying a WFPB diet to decrease inflammation and hopefully avoid biologics. Thank you so much for making these videos. I find them incredibly helpful!

    My favorite comfort food is vegetable fried rise. I usually eat a huge purple sweet potatoe, raw broccoli with hummus and a huge salad for lunch. I don't eat breakfast.

    In addition to what you eat in a day, what do you typically drink for hydration, etc? Any coffee and/or tea? Do you add an electrolyte powder to water?

      Welcome! I just drink water or La Croix and tea (favs are Earl Grey and Trader Joe's organic green tea). I never drank alcohol or coffee.

    Smoothie
    Includes broccoli, ginger, 1/2 whole lemon, banana, blueberries
    Plus tea spoon of powdered tumeric, alma and pomegranate and a sprinkle of black pepper.
    Coupled with a cop of walnuts, pumpkin seed, sunflower seeds, flaxseed,
    Sesame seeds and chia seeds.
    Phew That’s breakfast !!

    Cold you share what type of soymilk I’m seeing that the plant milks have lots of processed ingredients like gellan gum & things like that I recently found a gum free almond milk too

    I went vegan now for like a year now.. I always had a fast metabolism an since becoming vegan I lost so much weight more then what I wanted.. how can I maintain a nice healthy weight on a plant based lifestyle

      A supplement, other fortified foods or sea vegetables such as kelp, nori, kombu, wakame, and arame. aim for 150 mcg daily but not more than that.

    Dr. Marbas, thank you for the video, this was great. I have a question not related to eating exactly. My dad and mom are 71 and 70 year old respectively and have been following a Whole Foods plant based oil free diet. They recently had annual physicals and both had low inonized calcium blood levels. It was less than the range showed and the primary care doctor immediately placed the blame on their vegan diets. Is this something you have seen and can you help us understand what this particular test result even means? Just when I thought my parents were doing great on this diet, I cannot even begin to tell you the myths from everyone around. That said, it’s interesting that both their results are low.

      Hi AA, ionized calcium is the free calcium available for use by the body. It would be interesting to see their labs but to blame it on the diet is ridiculous without looking at all potential causes. I am always available to see patients at plantbasedtelehealth.com as well. I am licensed in 48 states and DC so far. Working on the last 2 states. Anyway, if there is a concern have them increase the calcium rich veggies and use almond or soy mild daily.

    Doctors can afford to eat right, us low income people can't... My monthly income would be Zero in 2 weeks eating right...
