SharePoint Online now allows you to edit, save, and annotate PDFs when you open them in the browser without Adobe Acrobat or other PDF-editing software!
My guess is this is going to open the door for some cool automation stuff down the road, using it as a step in a workflow process. You can already sign documents in workflow with third-party tools, looks like they're taking it in-house (eyeballing Syntex here...)

Apple did the same thing with Ventura and iOS17, so all the Apple apps support PDF's, so maybe they are just keeping up with Apple?

I don't think you can right now, short of setting the permissions for the people you don't want to edit to read instead of edit/contribute.
I have it working... But trully... It's too basic I guess. No Digital Signature From Sharepoint Credencials... Well... A lot missing actually!
I’ve seen some announcements that that’s coming soon. Likely going to be part of SharePoint Premium if I had to guess though. 🙃
