NISHIME ROOT VEGGIES - FOOD AS MEDICINE

  • Nishime is a Japanese word for this root vegetable dish.
    This dish has warming and strengthening energy. It is supportive of the spleen, pancreas and enhances the whole digestive system.
    Root vegetables are full of protein, fiber, vitamin A, B and C. Also vegetables and fruits are our best sources of antioxidants. Antioxidants are compounds that stop oxidation which is a chemical that can create free radicals. We do not want free radicals and want our cells to be protected from them, as then we are dealing with chronic diseases like cancer, heart disease and diabetes.
    This dish is fast, easy and delicious
    Any vegetables like, carrots, onions, sweet potatoes, winter squash, turnips, beets, radishes, brussel sprouts, celeriac, rutabaga, bit of garlic and or bit of ginger, green cabbage
    In a good size pot, you put a 6 inch piece of KOMBU sea veggie in the pot with just the bottom of the pot filled with water. Prepare your vegetables. When Kombu is soft, slice in thin strips. and return to pot. As in the video group vegetables around the pot with the kombu on the bottom.
    Put on heat and bring to boil, cover and lower heat. Cook for about 20 to 35 minutes. Check for softness. Also keep an eye, on water as you may need to add just a bit.
    Once cooked add some Tamari and let simmer 3 minutes.
    The vegetables will be so sweet and delicious.

    Kombu is great for your skin, is high in protein, calcium, zinc, magnesium and iron. Also contain vitamins A, B, C, and E It contains glutamic acid which is a flavor enhancer and tenderizer. Kombu softens beans and makes them more digestible
