That amburana aged cachaca is what’s giving you that spice note. Amburana finished bourbon tends to give you a heavy cinnamon flavor. It’s very much a love it or hate it type of finish.

I visited Smuggler's Cove last year, and while their Rum Barrel was what I was most excited for, the Fluffy Banana was by far my favorite drink of the night, so I'm very excited to be able to try it at home!
I went to the Smugglers Cove popup in June and I kept the menu. For the one I had (which was amazing) the menu says it used Planteray Isle of Fiji Rum. However, I think it was a collab with Planteray because every drink had only Planteray. I also remember the one I had, the bitter dashes were added on top of the foam. Thanks for the video!
Two banana cocktails of mine: 1)Holla Back Girl(banana cream pie) not mentioning ratios, egg white; giffard banana de brasil; vanilla vodka; pineapple juice; frangelico. My pride and joy 2) Ole' Smokey: adamize mezcal to glass; 1/2 oz giffard banana de brasil; 1 1/2-2 oz rye or bourbon(I like angels envy rye) w/rock (optional black walnut bitters) Please let me know what you think.. I have put this together over my time at a craft cocktail lounge and never was able to make this official but I thought these were keepers and should be shared. Ill never be recognized as a mixologist but I do find these two to be worthy cocktails
Well, I watched this video after having 2 cocktails, variations on Pina colada one had elderflower liquor, the other some el dorado. So enough for me tonight, I will try this one tomorrow.
I appreciate you actually fixing your short comings. You ALWAYS drink your ingredients separately. That way, you get a deeper understanding of what it is you’re building
My favourite pastime is walking into my largest liquor store and trying to ask about liquers and spirits that aren't whisky or Coor Light... Lets just say there's a lot of hand gestures and yet another domestic whisky purchase... Lol
I wonder if one has a different foam profile because of fat separation in the coconut mix. If the fat rises to the top in the bottle I would expect the first drink may be slightly different. Just a hypothesis.
Another great vid Derek! I do have to ask, are the foam levels for the drink at Smuggler's Cove that consistent? It seems to me that you may be trying a level of foam perfection that just isn't achievable.
Honestly I don't think that's something I will take on. At least no time soon. Banana is so tricky to work with and the commercial stuff is just so good. Not saying never, but not anytime soon.

You can get sweetened condensed coconut milk too. I use it for pina colada's might be the right sweet ratio

Do you have any advice for subbing the aged cachaca? I have unaged novo fogo, perhaps a split base with an aged rum?
I made it with a 1 oz split of clement blanc and Neisson aged and used the reàl coconut and while sweet was delightful

No they're not all the same there. Depends on bartender and probably a whole other host of factors, but that's why I don't think it's important.
