for anyone wondering: to make the butter and sugar "light and fluffy" you have to mix it A LOT longer than you think (8-10 min on high speed). it should be pure white in color and feel smooth between your fingers (you shouldn't feel any sugar granules). after that, only mix long enough so that everything is incorporated to prevent over mixing 👍
10:18 baker here! So I recommend if you add color to your baked goods, to bake the item at the same time, but 5 degrees cooler, to ensure not only it bakes thoroughly, but also that the color stays strong! Hope this helps! 😊 BTW, you did a REALLY good job with not only making the cupcakes, but also with adding the flavor, as many of the drops you did would equal around a teaspoon which is the recommended amount!

As someone who is not a professional baker but got tips from their parents I’m going to help the people who are still reading this 1. I’m pretty sure cake flour is supposed to make your cake more fluffy but if you’re not a professional it doesn’t really matter 3:30 2. If you’re microwaving butter check it every 5 seconds if you don’t it could splatter all over the microwave 3. You’re not stupid for thinking that and it is only for flavor 5:01 4. I don’t think the temperature of the eggs matters also if the yolk gets in the bowl it’s not the end of the world 5:12 5. Over mix means you should only stir it until there’s no more flower/dry ingredients visible 6:40 6. Not for cupcakes but if you’re making cookies you can scoop out the batter with a greased ice cream scooper it makes it much easier 7:29 7. More of a fun fact, If you have your own chickens/know well where they’re coming from you can the eggs raw! 9:20 8. I don’t think anyone can (if you can tell me your secrets) 10:10 9. Edible glue? yes! 12:54 10. If the recipe seems like it’s going to be very long you can always have a baking buddy! 17:00
Hi Moriah! Just to answer some of your questions: 1. Cake flour is basically flour with lower gluten (ie less protein) as gluten is what gives bread that chewy texture we don’t want that in our cakes ergo cake flour :> 2. Vanilla isn’t merely a flavouring, but I would say is what gives most good pastries their depth of flavour, so adding half-one teaspoon of vanilla extract would bring out your other flavours more! 3. A cup of a liquid or a cup of a dry ingredient is still the same cup. HOWEVER a cup of diff ingredients (no matter liquid or dry) would have different masses as ultimately the amount of one ingredient that’s in a cup is diff to another! 4. A sure sign something is over-mixed is when there is separation instead of one homogenous mixture or when your cake comes out dense and chewy as over mixing forms more gluten resulting in that texture. Over-mixing also knocks out all the air that you’ve beaten into the batter when you creamed the sugar and butter, which also contributes to a denser and chewy texture and also a flatter top. So one way to ensure you’re not over-mixing is to stop a few seconds after all the flour has been completely mixed into the batter (I normally use a spatula so that I could gently fold the batter when the flour is almost completely mixed in for more control) Hope that helps! :D

Cake flour is extra fine in comparison to all-purpose! It helps to make it fluffy and has less gluten. Also, to avoid over mixing, when you no longer see any powder/liquid that's usually enough! Over Mixing can cause a cake to come out dense
You've come so far! You've improved so much in your baking! It's a pleasure to watch. I honestly think the only suggestions I have is using a mint leaf instead of a plastic leaf for the orange cupcake so its edible... just in case anyone wants to do a cute theme like this for themselves and if you want to help prevent browning, you can place aluminum foil over the cupcakes part way through the cooking process so they don't overbake on top. Oh. And just a term thing. Another way of phrasing "Don't Overmix" is to say, "Mix until ingredients are just blended" aka... don't turn your mixer on and walk away. Overmixing can make what should be a fluffy cake mix feel gummy or dense because the gluten structures overdeveloped due to over-mixing.
As someone who's been baking since I was 8, the butter wasn't suppose to be melted, also butter melts super fast, so if you want it warm, I'd recommend only microwaving the butter for about 3-15 seconds, also when warming up butter I also recommend cutting it after you microwave it, no judgement, you're quite new to baking, it took me awhile to get good, even now I still make mistakes. Btw I love your videos, they also make me smile, and even give me inspiration for future projects!

Hey Moriah! I just wanted to let you know that when you measure flower you are supposed to spoon it in the cup and level it off. Don't pack it down its supposed to be airy. Over fill the cup then take a level or a flat knife and swipe off the mound and then add it to your bowl. I hope this helps! I really love all of your videos! I look forward to them every Friday!

Hi Moriah! Just to answer some of your questions:
1. Cake flour is basically flour with lower gluten (ie less protein) as gluten is what gives bread that chewy texture we don’t want that in our cakes ergo cake flour :>
2. Vanilla isn’t merely a flavouring, but I would say is what gives most good pastries their depth of flavour, so adding half-one teaspoon of vanilla extract would bring out your other flavours more!
3. A cup of a liquid or a cup of a dry ingredient is still the same cup. HOWEVER a cup of diff ingredients (no matter liquid or dry) would have different masses as ultimately the amount of one ingredient that’s in a cup is diff to another!
4. A sure sign something is over-mixed is when there is separation instead of one homogenous mixture or when your cake comes out dense and chewy as over mixing forms more gluten resulting in that texture. Over-mixing also knocks out all the air that you’ve beaten into the batter when you creamed the sugar and butter, which also contributes to a denser and chewy texture and also a flatter top.
So one way to ensure you’re not over-mixing is to stop a few seconds after all the flour has been completely mixed into the batter (I normally use a spatula so that I could gently fold the batter when the flour is almost completely mixed in for more control)

Cake flour is extra fine in comparison to all-purpose! It helps to make it fluffy and has less gluten. Also, to avoid over mixing, when you no longer see any powder/liquid that's usually enough! Over Mixing can cause a cake to come out dense

You've come so far! You've improved so much in your baking! It's a pleasure to watch. I honestly think the only suggestions I have is using a mint leaf instead of a plastic leaf for the orange cupcake so its edible... just in case anyone wants to do a cute theme like this for themselves and if you want to help prevent browning, you can place aluminum foil over the cupcakes part way through the cooking process so they don't overbake on top.
Oh. And just a term thing. Another way of phrasing "Don't Overmix" is to say, "Mix until ingredients are just blended" aka... don't turn your mixer on and walk away. Overmixing can make what should be a fluffy cake mix feel gummy or dense because the gluten structures overdeveloped due to over-mixing.
As someone who's been baking since I was 8, the butter wasn't suppose to be melted, also butter melts super fast, so if you want it warm, I'd recommend only microwaving the butter for about 3-15 seconds, also when warming up butter I also recommend cutting it after you microwave it, no judgement, you're quite new to baking, it took me awhile to get good, even now I still make mistakes. Btw I love your videos, they also make me smile, and even give me inspiration for future projects!

FYI I asked my mum about the vanilla extract and she said it's not just flavouring it helps prevent the taste of egginess in the cupcake since there is egg in the batter. If you are making a savory food you put vinegar to prevent egginess taste and desserts you put vanilla! The more you know!. 🤭

Hey Moriah! I just wanted to let you know that when you measure flower you are supposed to spoon it in the cup and level it off. Don't pack it down its supposed to be airy. Over fill the cup then take a level or a flat knife and swipe off the mound and then add it to your bowl. I hope this helps! I really love all of your videos! I look forward to them every Friday!
