I see Mark is using the awesome Kiwi knife (made in Thailand, not NZ, btw...). I've been using these for about 20 years. When I worked in kitchens I used to bring my own as I found the Kiwi superior as a general utility knife to big-name brands costing many times as much.
To make this vegan/vegetarian: replace fish sauce with golden mountain sauce (you need a bit more as it is not as salty) and a dash of thai soy bean paste to give it a bit of funk. Taste as funky as the real fish sauce thingy.
I am watching your videos every night before I go to sleep. Lol. I am going to make this tomorrow with the shredded papaya that I have left from earlier this week. I hope it's as good as yours!
Mark, I lived in Thailand for 26 years. Now in Canada. Your videos is my way to connect back to the wonderful street side foods of Bangkok. I am an engineer by profession but I share the passion for food the way you do. I cannot forget after a long hard work day, stopping over at some Isan join on Pratunam or Sukhumvit 38 and having some spicy nua nam tok and som tam lao with stick rice and sweating out all the stress of the day! Have you been to the Thai Muslim joints on Rama 9 road, Kai Yang Jeripan? Your video on the lobster in hua hin had me dreaming for days! Man I wanted to take my next flight to Hua Hin and devour those lobsters! I really love the way you do not compromise on the authenticity of the food. Oh next time you ever go to India, make sure you go to New Delhi and try out Kareems Restaurant . There is one joint in Old Delhi in the Mina Bazaar road opposite of the grand mosque called Aslams Chicken! This guy only sells one item, there is no name for it. Its off the hook! Its a buttery (a entire block of butter) chicken roasted tikka mix salad with herbs and spices and vegetable like onions, radish, cilantro. Also make sure to try Haji Nura Nihari on Hindu Rao Road, you never eaten anything like this. It is a Beef Nihari, google it. Out of bounds! The beef is so so so soft and chocolaty and you eat with super fluffy soft nan bread. Truly enjoy your videos man.
Hey Tarique Shakil, thank you so much for watching my videos. Sounds like we share a serious passion together for food. Wow, that chicken in Delhi sounds out of control. Might have to fly there just for that!
Nooooooo. Its finger food. Use your fingers... at least you know how Thai people use cutlery, Spoon and Fork. Lol every time I see someone trying to eat rice with just a Fork noob farang style... Not that som tam has rice in it... you know what I mean XD
its must be more awesome if you add some Pla-ra (ปลาร้า) or change from Papaya to cucumbers ,long beans etc .... and you can also eat with Kha nom Jean (ขนมจีน) XD
Hello wiens, do you have any advice on the fish sauce? because some fish sauce can be quite different in other countries and since im living abroad. I really want it’s authentic taste as possible. I miss thailand so much Thank you.
Thanks for sharing! Tomorow i have a special dinner at home. I will go to the market to see if i can get green papaya. i´m not sure we have it in portugal.
Mark Wiens It went very well. for main course I made meatloaf in the oven wrapped in puff pastry. For desert mango mousse. No!! its not to much food!!! The Portuguese eat and drink a lot.
Edenwild Halcyon..ur rt..it holds the flavor as it was made fresh even if we put it in the fridge for a couple of days unlike lime we have to eat it rt away.. but as for me I use both and it still taste as good.. 😁
I don't happen to make it this way but some of my relatives do make it this way. I usually start with the peppers, salt and garlic then add papaya, sugar, tamarind sauce, crab paste, shrimp paste, lime, peanuts or peanut butter, fish sauce..Damn, I'm salivating just thinking about it.
+Mark Wiens ! hi Mark! correct me if I am wrong, I ate this green papaya salad not long ago, but I remember my friend she's also added fermented salt crabs, or just optional?
Thanks for sharing, there are a few varieties of som tum, salted crab have you try that yet? Would be nice if you can share and prepare those varieties.
Another excellent vid Mark. I'm eating more cabbage as I'm trying to loose weight. But eating it raw is a little hard core. I like it blanched slightly or stir fried with very little oil. But I'll try it in a salad combo like that and see. I have to buy a mortar and pestal now to try some of these Thai recipes... lol
Thank you for the recipe! How is the cabbage incorporated into the dish? Also, thank you for wearing an apron! Just works very well when you are showing how to make a recipe. GREAT video!
Finally found a perfect SOM TAM recipe, easy to make, at least that is how you you made it look like when you demonstrated...I am surely going to try it...thank you very much indeed..
Yes I did! I have been following Thai recipes cooking for 8-9 years now but have never tried this salad before. And I've been wanting to try this salad for years now and I wasn't disappointed at all. I would love to prepare it at home but green papaya are hard to come by here. It seems you travel a lot. Let me know if you come to Japan let me know
Hello, glad you like to cook Thai food, hope you can find green papaya. We are heading to Tokyo next month for a few weeks. What part of Japan are you from?
Wow ! I must say wow because even me living in Thailand for almost 23 years, I still cant cook it myself. Thanks for another marvelous video Mark ! thumb up !
That looked very good Mark! Thanks for sharing! In what countries is it proper to use chop sticks? Or just using your fingers? I see you doing both in different video's
Hey Tom, in Thailand people formerly ate with their fingers, but now use spoon and fork. The only eaten with chopsticks in Thailand is soup noodles, and that's from Chinese. A lot of southeast Asia and Africa is typical for eating with your fingers.
Mark Wiens In nearby Vietnam I had to learn to eat soup with a Chinese spoon in the left hand and chop sticks in the right hand - as Mark suggested how it's popular in Thailand - particularly for soups. But Vietnamese eat a lot of meals that way with a spoon in the left hand. Cooks also use scissors in Vietnam frequently and I see it sometimes in Thai preparations. Mark uses that Thai mortal and pestal a lot and that's also mostly used in Thailand. With eating food by hand - yeah that's common but now, the new twist is that it's frequently served in a plastic bag or at least paper to keep the hands away from the food.

Omg you look so different here, lol, I'm use to seeing you try food already cooked. This is my first time seeing you prepare anything. Love it!
Yummy, this is a killer dish, I remember my daily fix of Som Tam for 3 months
