Paper plates for a 8x10 Detroit is kind of small but I guess it’s doable. It’s also not very sturdy but I’m open to the idea. Do you or have you had a full pan pizza served on just a paper plate?
@@whatsgooddoughI never have seen or heard of this. It sounds like a logistical nightmare. Maybe paper plates for people who just want to eat next to the pop-up, otherwise boxes are too useful (not to mention safe from spillage) for those wanting to take their pie to go. Paper plates sounds like they could be a money saver, depending on what your customers tend to do. Maybe ask your repeat customers if they'd eat near the pop-up if paper plates were offered, if they don't already eat next to it.
Great episode and great interview

Par-bake, cool on rack, freeze uncovered for few hrs then vac-seal, back in freezer.
Pizza looks great 👍
The crust on the sides looks amazing! What kind of cheese are you using?
He’s using Galbani whole milk, mozzarella and he shreds it fresh
