Turkish GOZLEME Flat Bread With Eggplant 😍 VEGAN Filling!

- Making Turkish gozleme flatbread with beautiful vegan filling. It is so delicious that many people think it has meat in it when they try it.
It has onions, eggplants, pepper, tomatoes and seasonings.
I will show you how you can roll out the dough both with a rolling pin and an oklava "Turkish thin rolling pin".
Note: I used butter to brush the gozlemes but you can simply use olive oil to make it vegan.
Ingredients for Vegan Flat Bread Gozleme With Eggplants:
For the filling:
3-4 medium size eggplants
1 onion
2 tomatoes
4-5 mild or sweet green peppers
2-3 cloves of garlic (optional)
1 tsp tomato paste
4-5 tbsp olive oil
Salt, black pepper, and paprika to taste
For the gozleme flatbread dough:
300ml mix of water and yogurt (I added 2 heaped tbsp yogurt and add water and mixed)
about3+1/2 cups to 4 cups of flour
1 tsp salt
more flour to roll out the dough
Also, butter or olive oil to brush gozlemes when cooking.

Dear friends for the VEGAN recipe I have to note that you can skip using yogurt in the dough, add some olive oil, or use vegan yogurt. Also brush the gozlemes when cooking brush with olive oil instead of butter.

You asked about any suggestions on different fillings, I would say........something sour like maybe craneberries or tamarind. But just a little to give it a distinct flavour.
For those who do not have the Oklava, try at your local hardware store in the curtains section they have long rounded wood, and also they have them in the brush section.

looks yummy, im going to make it but im taking off the pepper r and instead im adding mushrooms, I love mushroom and its also give u the meat flavor as the eggplants will let u know, I think green scallion will add flavor too did it before.

I don't really have any suggestions on seasonings as that is a personal choice. Some like it this way, some like it that way. The ONLY thing I would change is to saute the topping vegetables in clarified butter rather than a vegetable oil. Yes, it's less healthy, but it is extremely delicious. Moderation is the rule. Actually, a mix of vegetable oil and clarified butter would do. I think I would prefer your later version with the cheese. Thanks for another great recipe videolog!
