@@JackAynsleyTravel Great job being a good dude and building bridges. If you're learning Chinese to understand the history/culture/people, then approach it from two channels: 口语 Spoken / 漢字 Characters ... These are two very, very distinct human language abilities and Chinese is a Labyrinth until you're able to read, so the tendency is to focus on characters. This is time consuming, to the tune of years and years, at the cost of speaking skill and simple friendships to practice sentences. Think of 漢字 as a separate universe, spend the time to walk the trails along the stream and follow it through the hills back to the source thousands and thousands of years ago to the 爾雅 erya where the oracle bone carvings turned to seal script and began the journey to what you see on the streets today. If you spend the time to learn how it all came to be, you then follow the path of ancient Buddhism seen in Wu Kong and understand all the mythology and 氣 and relationship to nature that is the basis of Chinese culture.

What you had is Dao(knife)-Xiao(cut/shaved)-Mian(noodle), or hand-shaved noodles. And the pan cake you asked about is red bean one as hóng(red)-dòu(bean) in Chinese.
Knife-cut noodles, known as Dao-Xiao-Mian in Chinese, are a traditional dish renowned for their unique texture and preparation method. The noodles are made from simple wheat flour and water dough, which is hand-rolled into a thick sheet. The distinctive feature of these noodles lies in the way they are cut; chefs use a sharp knife to shave off thin strips directly into boiling water, creating irregularly shaped noodles that vary in thickness.
This method gives the noodles a chewy, hearty texture that pairs well with a variety of sauces and toppings. Typically served in rich broths or stir-fried with vegetables and meats, knife-cut noodles absorb flavors beautifully, making each bite satisfying. The dish is often garnished with fresh herbs, scallions, and spices, adding vibrant colors and additional depth to the flavor profile. Overall, knife-cut noodles are a beloved staple in Chinese cuisine, celebrated for their handmade quality and delicious taste.

You said exactly the right thing when you walked into the restaurant, in fact so proper and polite that the people did not quite know how best and exactly to respond. That was a reflection on their not knowing what to say rather than your saying the wrong thing. Most people would feel very pleased to hear why you are learning Chinese. Datong City in Shanxi Province was once famous for coal mining. The environment was once very bad. Today, there are still so many ancient buildings and the environment is so beautiful because there was once a very outstanding mayor here: Geng Yanbo. There was once a documentary called "Datong" that told this story. Thanks to Mayor Geng.🙏

The ticket for Yungang Grotto is 120 yuan for an adult. I also paid this amount in September as a Chinese citizen. There are cheaper tickets (maybe half price, not sure) for seniors or other type of discount tickets. So it is probably a misunderstanding for 20 yuan for 3 people. Don’t need to feel bad that you thought you were defrauded or treated differently because you are foreigners.❤

In fact, in China, the Buddha statue in Yungang Grottoes is not that big. There is a Guanyin statue in Foshan, Guangdong, which is 203 feet high, a Buddha statue in Leshan, Sichuan, which is 233 feet high, a Guanyin statue in Sanya, Hainan, which is 354 feet high, and a Buddha statue in Pingdingshan, Henan, which is 682 feet high.
