There's a place in Texas that did a Mexican Indian fusion. It kinda worked. There was a pop up here in Louisiana in New Orleans that did Indian Cajun creole fusion and it was also good. Good food is good food, and all the cultures mentioned know flavor and seasoning.
There is whole restaurant chain that's created for Indian Mexican fusion food specially tacos called Bollywood tacos headquartered in Georgia state Its menus well researched for true fusion experience keeping worldwide audience in mind, unlike the experiment of putting random Indian that too mostly Punjabi gravy on tacos

They call kathi roll burrito. Burritos are extremely popular. I hear people get offended in India when foreigners make burritos of their food. People here have been doing that since time imemorable. Helps keep hands clean.

Indian food has Naan bread that is basically a giant tortilla
