    PANEER KORMA
    Preparation time 10 minutes
    Cooking time 25-30 minutes
    Serve 2-4
    Ingredients
    For Paneer Korma
    ⅓ cup Oil, तेल
    3-4 tbsp Ghee, घी
    3 no. large Onions, finely chopped, प्याज
    1 ½ tbsp Ginger Garlic paste, अदरक लहसुन का पेस्ट
    ¼ tsp Turmeric powder, हल्दी पाउडर
    1 tbsp Degi red chili powder, देगी लाल मिर्च पाउडर
    2-3 tbsp Coriander powder, धनिया पाउडर
    10-12 no. Cashew nuts, काजू
    1 cup Curd, beaten, दही
    Salt to taste, नमक स्वादअनुसार
    1 ½ cups Water, पानी
    ½ cup Water, पानी
    1 tsp Sugar, चीनी
    ½ tbsp Prepared Masala, तयार किया हुआ मसाला
    1 tbsp Tender coriander stems, finely chopped, धनिये के डंठल
    Fried Paneer, तला हुआ पनीर
    ½ tsp Kewra water, केवड़ा जल
    ½ tsp Rose water, गुलाब जल
    For Frying Paneer
    ¼ cup Oil, तेल
    800 gms Paneer, medium cubed, पनीर
    For Masala
    12-15 no. Green cardamom, हरी इलायची
    7-8 no. Black cardamom, बड़ी इलायची
    10-12 no. Cloves, लौंग
    2 no. Mace, जावित्री
    For Garnish
    Coriander sprig, धनिया पत्ता
    Fried Cashew Nut, तले हुए काजू
    Fried Foxnut, तले हुए मखाने
    Process
    For Paneer Korma
    ● In a handi, add oil, ghee, once it's hot, add onions and saute it for 7-8 minutes until golden brown.
    ● Add ginger garlic paste, turmeric powder, degi red chili powder, coriander powder and cook it well.
    ● Add cashew nuts, curd, salt to taste and cook for a while until oil releases from the sides of the handi.
    ● Grind it to a smooth fine paste with the help of a hand blender.
    ● Transfer it to the same handi, add water and simmer it for 7-8 minutes on medium flames.
    ● Add water to adjust the consistency, sugar, prepared masala, tender coriander stems, fried paneer and cook it for a while.
    ● Finish it with some kewra water, rose water and mix it well.
    ● Transfer it to a serving dish or bowl, garnish it with coriander sprig, fried cashew nuts and fried fox nuts.
    ● Serve hot with roti or paratha.
    For Frying
    ● In a non-stick pan, add oil, once it's hot, add paneer and shallow fry it for 2-3 minutes from all sides until golden in color.
    ● Keep it aside for further use.
    For Masala
    ● In a tray, add green cardamom, black cardamom, cloves and mace.
    ● Transfer it to a mixer grinder jar and grind into a fine powder.
    ● Keep it aside for further use.
